Sausage Croissant Breakfast Casserole is an easy, make-ahead breakfast recipe that is sure to be a crowd pleaser! It's a croissant breakfast casserole made with mild Italian sausage, croissants, eggs, milk, and cheddar cheese, and is perfect for a weekend breakfast or brunch.

I love a good breakfast casserole. There are just so many options when it comes to how to make them, and I love experimenting with them. While my Sausage Egg and Cheese Biscuit Breakfast Casserole is our go-to staple, this Sausage Croissant Breakfast Casserole is giving it a run for its money!

One of the things that stands out about this sausage croissant casserole is that you can make it ahead of time. Prep the entire thing the night before and then all you have to do in the morning is pop it in the oven! That's my ideal kind of weekend breakfast.

Ingredients for Sausage Croissant Casserole

  • Croissants - note: these are different than crescent rolls!  I'm talking about the buttery, delicious croissants you'd buy from a bakery, not the ones from a can. I usually buy the croissants from the Costco bakery.
  • Ground Mild Italian Sausage - I love the flavor of Italian sausage, but you can use breakfast sausage too, if you prefer! Turkey sausage, bacon, and ham would all work as well! In fact, I have a recipe for Ham Croissant Breakfast Casserole, too!
  • Large Eggs
  • Milk - any kind of milk will do! You can use skim, low fat, or even half and half.
  • Dijon Mustard - dijon mustard adds a delicious flavor to the egg mixture
  • Shredded Cheddar Cheese - cheddar cheese pairs really well with the croissant and sausage in this breakfast casserole recipe.
  • Salt and Black Pepper

How to Make Sausage Croissant Breakfast Casserole

This sausage breakfast casserole can be prepped the morning of, or it can be an overnight breakfast casserole. Below you'll find instructions for both ways.

Cook the sausage. Brown the sausage in a large skillet over medium heat and cook until it's browned, breaking it into small pieces as you go. Oh and if you don't have one of these for cooking ground meat, you're missing out!

Prep the croissants. Cut the croissants into bite-sized pieces and place them in the bottom of a greased 9x13" baking dish.

Assemble. Sprinkle the browned sausage and shredded cheese on top of the croissants. Note: croissants can be found in the bakery section of your grocery store. I love buying them from Costco!

Prep the egg mixture. Whisk together the eggs, milk, dijon mustard, salt, and black pepper in a large bowl until it's all well combined. Then pour the egg mixture on top of the sausage and cheese.

Refrigerate or bake. At this point, you can either cover with plastic wrap or foil,place in the refrigerator, and refrigerate overnight, or bake! To bake, preheat your oven to 350 degrees and bake for 45-50 minutes. The top should be golden brown and the eggs should be set in the middle.

If you make this into an overnight croissant casserole, pull the casserole out of the fridge in the morning while you preheat the oven. You want this sausage croissant casserole to come to about room temperature, which will take around 30 minutes. Bake the casserole in the preheated oven for about 50-55 minutes. It will take a little bit longer than cooking it right away, as the casserole will still be starting from a bit colder since it's been in the fridge. It's such an easy and delicious recipe!

I don't think it's any surprise that this overnight breakfast casserole was gone in no time with my family. The combination of the buttery croissants with the sausage and cheddar cheese was pure perfection.

Croissant Breakfast Casserole Variations

Add vegetables. If you like onions, you can definitely add one diced white or yellow onion to the sausage to saute it while the sausage is also cooking. Other vegetables that would be great in this recipe include chopped baby spinach, chopped zucchini, and chopped bell peppers. Simply saute them with the sausage.

Meat Swap. If you don't like sausage, you can add 2 cups of diced ham to the casserole instead. In addition, you could use 6 slices of cooked bacon, or the same amount of chorizo sausage.

Use different cheese. I used shredded cheddar cheese, however you can use Swiss, gruyere cheese, shredded mozzarella, or Colby Jack if you like!

Ingredients

  • 1 lb Italian sausage
  • 6 cups cubed croissants about 5-6 croissants
  • 1 ½ cups shredded cheddar cheese
  • 8 large eggs
  • 1 ¼ cup milk
  • 2 teaspoon dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon pepper

Instructions

  • In a skillet, brown the sausage over medium heat, breaking it into pieces as it cooks.
  • Spray a 9x13" baking dish with cooking spray.
  • Spread the cubed croissants on the bottom of the baking dish. Sprinkle with the cooked sausage and shredded cheese.
  • In a medium bowl, whisk together the eggs, milk, dijon mustard, salt, and pepper.
  • Pour the egg mixture over the croissants/sausage/cheese.
  • Cover and refrigerate overnight.
  • In the morning, preheat the oven to 350 degrees.
  • Bake the casserole in the preheated oven for 45-55 minutes, until golden brown and no longer wet in the middle.
  • Serve and enjoy!
