I love a good sweet breakfast casserole, but typically use French bread. These are delicious, but I had a Costco sized container of croissants staring me down the other day, and I decided to take my breakfast casserole up to a whole new level. This Blueberry Croissant Breakfast Casserole is absolutely delicious and perhaps my new favorite way to make breakfast casseroles!

Croissants are perfect for breakfast casseroles because they're light in texture and soak up the egg mixture really well. They also keep the casserole tasting super flavorful and buttery, and the top layer is delicious and flaky! This sweet breakfast casserole with croissants is perfect for a weekend brunch or a holiday breakfast! It can be prepared ahead of time, the night before, so all you have to do is pop it in the oven and bake.

Ingredients in Blueberry Croissant Breakfast Casserole

  • Croissants - note, these are NOT crescent rolls! I love to buy the package of croissants from Costco - we use about half for sandwiches and about half for this breakfast casserole!
  • Eggs - 10 eggs are whisked together to make up part of the liquid mixture for this croissant casserole.
  • Half and Half - using half and half makes this breakfast casserole extra rich and delicious.
  • Brown Sugar - both brown sugar and white sugar sweeten up this casserole.
  • White Sugar
  • Vanilla Extract
  • Salt
  • Cinnamon
  • Blueberries - fresh blueberries are folded in with the croissants and egg mixture for this delicious blueberry croissant casserole!

How to Make Croissant Breakfast Casserole

This croissant breakfast casserole recipe is simple, straight forward, and can be made ahead of time. To start, cut the croissants up into pieces. I didn't measure exactly how big the pieces are, but I'd say about 1" cubes. Place croissant pieces in a greased 9x13" baking pan and sprinkle with the fresh blueberries.

In a medium bowl, whisk together the eggs, half and half, milk, brown sugar, white sugar, cinnamon, vanilla, and salt, and pour the mixture over the croissants. At this point you can either bake immediately or cover and chill until you're ready to bake. Once it's time for breakfast, preheat the oven to 350 degrees F. Bake in the preheated oven for 40-50 minutes, until the casserole is set and the top is golden brown. Serve topped with maple syrup or powdered sugar and, enjoy!

Here are some ways you can adapt this blueberry croissant bake recipe to fit your preferences.

  • Add 1 cup of chopped pecans or sliced almonds for a bit of crunch.

Ingredients

  • 10 large eggs
  • 2 cups half and half
  • 1 cup milk
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 2 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 6-7 large croissants, cubed I used the ones from Costco,
  • 1 cup fresh blueberries

Instructions

  • If making immediately, preheat the oven to 350 degrees F.
  • Grease a 9x13" baking dish with cooking spray.
  • Add the croissants to the baking dish. They should fill the baking dish but not overflow.
  • Sprinkle the blueberries on top.
  • In a large bowl, whisk together the eggs, half and half, milk, sugars, vanilla, cinnamon, and salt.
  • Pour the mixture evenly over the croissants and blueberries, pressing the croissants down to soak up the mixture.
  • If making ahead of time, cover with plastic wrap or foil and refrigerate.
  • Prior to baking remove the casserole from the refrigerator and let it sit for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Bake in the preheated oven for 40-50 minutes, until the egg mixture is set and the top is golden brown.
  • Serve topped with powdered sugar or maple syrup.
  • Enjoy!
