Blueberry Croissant Breakfast Casserole

Blueberry Croissant Breakfast Casserole is an easy overnight breakfast casserole made with buttery croissants and fresh blueberries. It is perfect for Christmas morning drizzled with a bit of maple syrup or dusted with powdered sugar!

I love a good sweet breakfast casserole, but typically use French bread. These are delicious, but I had a Costco sized container of croissants staring me down the other day, and I decided to take my breakfast casserole up to a whole new level. This Blueberry Croissant Breakfast Casserole is absolutely delicious and perhaps my new favorite way to make breakfast casseroles!

Croissants are perfect for breakfast casseroles because they’re light in texture and soak up the egg mixture really well. They also keep the casserole tasting super flavorful and buttery, and the top layer is delicious and flaky! This sweet breakfast casserole with croissants is perfect for a weekend brunch or a holiday breakfast! It can be prepared ahead of time, the night before, so all you have to do is pop it in the oven and bake.

What You’ll Need

  • Croissants – note, these are NOT crescent rolls!
  • Eggs
  • Half and Half
  • Brown Sugar
  • White Sugar
  • Vanilla Extract
  • Salt
  • Cinnamon
  • Blueberries

How to Make Croissant Breakfast Casserole

This croissant breakfast casserole recipe is simple, straight forward, and can be made ahead of time. To start, cut the croissants up into pieces. I didn’t measure exactly how big the pieces are, but I’d say about 1″ cubes. Place croissant pieces in a greased 9×13″ baking pan and sprinkle with the fresh blueberries.

In a medium bowl, whisk together the eggs, half and half, milk, brown sugar, white sugar, cinnamon, vanilla, and salt, and pour the mixture over the croissants. At this point you can either bake immediately or cover and chill until you’re ready to bake. Once it’s time for breakfast, preheat the oven to 350 degrees F. Bake in the preheated oven for 40-50 minutes, until the casserole is set and the top is golden brown. Serve topped with maple syrup or powdered sugar and, enjoy!
