I love a good breakfast casserole. There are just so many options when it comes to how to make them, and I love experimenting with them. While my Sausage Egg and Cheese Biscuit Breakfast Casserole is our go-to staple, this Sausage Croissant Breakfast Casserole is giving it a run for its money!

One of the things that stands out about this sausage croissant casserole is that you can make it ahead of time. Prep the entire thing the night before and then all you have to do in the morning is pop it in the oven! Served with Raspberry Mimosas, and you've got my ideal kind of weekend or holiday breakfast.

  • Croissants - note: these are different than crescent rolls!  I'm talking about the buttery, delicious croissants you'd buy from a bakery, not the ones from a can. I usually buy the croissants from the Costco bakery.
  • Ground Mild Italian Sausage - I love the flavor of Italian sausage, but you can use breakfast sausage too, if you prefer! Turkey sausage, bacon, and ham would all work as well! In fact, I have a recipe for Ham Croissant Breakfast Casserole, too.
  • Shredded Cheddar Cheese - cheddar cheese pairs really well with the croissant and sausage in this breakfast casserole recipe.

Substitutions and Variations

Different Meat - If you don't like sausage, you can add 2 cups of diced ham to the casserole instead, like in my Ham Tater Tot Breakfast Casserole. In addition, you could use 6 slices of cooked bacon, or the same amount of chorizo sausage. I also have a Chorizo Hash Brown Breakfast Casserole recipe.

Add Vegetables - if you want to increase the nutrition a bit in this casserole, you can add some veggies like mushrooms, bell peppers, onion, green onions, spinach, and zucchini. I would saute them first in some olive oil so they are pre-cooked before adding them to the casserole.

Different cheese. I used shredded cheddar cheese, however you can use Swiss, gruyere cheese, shredded mozzarella, or Colby Jack if you like!

How to Make Sausage Croissant Breakfast Casserole

Photo 1. Brown the sausage in a large skillet over medium heat and cook until it's browned, breaking it into small pieces as you go. Oh and if you don't have one of these for cooking ground meat, you're missing out!

Photo 2. Whisk together the eggs, milk, dijon mustard, salt, and black pepper in a large bowl until it's all well combined.

Photo 3. Cut the croissants into bite-sized pieces and place them in the bottom of a greased 9 x 13-inch baking dish. Sprinkle the browned sausage and shredded cheese on top of the croissants. Then pour the egg mixture on top of the sausage and cheese.

Photo 4. At this point, you can either cover with plastic wrap or foil, place in the refrigerator, and refrigerate overnight, or bake! To bake, preheat your oven to 350 degrees and bake for 45-50 minutes. The top should be golden brown and the eggs should be set in the middle.

Overnight Option: If you make this into an overnight croissant casserole, pull the casserole out of the fridge in the morning while you preheat the oven. You want this sausage croissant casserole to come to about room temperature, which will take around 30 minutes. Bake the casserole in the preheated oven for about 50-55 minutes. It will take a little bit longer than cooking it right away, as the casserole will still be starting from a bit colder since it's been in the fridge. It's such an easy and delicious recipe!

To reheat, thaw completely and bake at 350 degrees for 20-30 minutes.

  1. This casserole is fabulous! Just put another one in the fridge for breakfast tomorrow. I used ham and sausage . This is the first time I put the Dijon mustard in and I'm looking forward to tasting if there is a difference.
