I’m a mom of three kids and home cook who loves creating delicious, easy, and healthy meals for my family. And for you! I live with my husband, kids, and Golden Retriever in a suburb of Minneapolis, MN but am a true Iowa girl at heart.

I have been running greens & chocolate for over 10 years, and am passionate about creating recipes that can be made in any kitchen. On greens & chocolate, you’ll find over 1,000 recipes that range from healthy dinners and sides, holiday recipes, irresistible desserts, and a few cocktail recipes. Some of my favorite features are all of my Instant Pot Recipes, my 3-Hour Thanksgiving Series, and my 14 Freezer Meals in 4 Hours Series.

In addition to running my blog, I have written two cookbooks - 30 Minute Cooking for Two, and The Easy 30 Minute Cookbook. I also enjoy running, yoga, cycling, cross country skiing, hiking, and basically anything outside with my family!

How did you come up with the name?

The name greens & chocolate comes from my love of two things - healthy greens and chocolate! I love cooking healthy meals filled with vegetables, but I also enjoy dessert on a daily basis, especially chocolate.

What is your favorite meal to make for your family?

This is a tough one! My kids love pasta, and my Instant Pot Sausage Rigatoni is ALWAYS a hit.

Do your kids actually eat with you make?

Well, it depends! That answer is really dependent on a lot of things, including what I made, their moods, how many snacks they've had that day, the weather... 😉 But in general, they are served the same meal that we eat and my philosophy is that I get to decide what's on their plate, and they get to decide if they eat it!
