Two nights ago Marc and I were in our bathroom hanging up some shelves when all of a sudden Marc goes "Woah!  You look pregnant!  When did that happen?"  To which I replied "I don't know...it's been happening?"  Then he goes "Have you been working on it?"  Emmmm what? If by "working on it" he means eating pancakes multiple days in a row, then yes.  And if by "working on it" he means growing a human being in my belly, then yes.  Working so hard on it.  Oh men.  So cute sometimes.Are you working on growing a baby?  Or perhaps working on eating more pancakes this year? Well then do I have the recipe for you!  THE fluffiest buttermilk pancakes with buttermilk sauce.

What is Buttermilk Sauce?

What is "buttermilk sauce" you ask?  I too was a buttermilk sauce newbie just a few weeks ago, and then I happened to run out of maple syrup on Christmas morning.  Major fail.

In my frantic mind I vaguely remembered seeing recipes for Buttermilk Syrup in the past, so after a quick google search on my iPad (p.s. what did we do before we had Google?), I found a recipe that looked simple, quick, and involved ingredients I had on hand.  It took a mere 5 minutes and breakfast was saved - we had syrup!  Not only did we have syrup but DANG - the stuff was good!

So this weekend when I had a major craving for light and fluffy buttermilk pancakes, I thought why not make the buttermilk syrup?  Ugggggh so good, again.  Even better, we though, with the pancakes.

Oh right, those pancakes.  Holy heck are they insanely good.  And dare I say they are THE fluffiest buttermilk pancakes that ever did exist?  We couldn't stop raving about them with every bite we took.  Of course, the buttermilk sauce made them that much better.  I think that instead of infusing the pancakes with maple syrup flavor, as maple syrup would do, the buttermilk syrup just complemented the pancakes.

The other thing I think made the pancakes so, so good was the addition of a pinch of cinnamon and a splash of vanilla.  I didn't want the cinnamon to overpower the pancakes (that's what Cinnamon Roll Pancakes are for) but I wanted just a hint of spice.  Nailed it.

If I have to convince you any more how good these pancakes are with the buttermilk syrup, maybe telling you I made them two mornings in a row last weekend will do the trick.  After making them on Saturday morning I pretty much thought of them all day long, dreamt about them, and woke up needing them on Sunday.  Since I couldn't get enough of the syrup that went along with the pancakes, I decided to make this post a twofer.  One post, two recipes!  Because really, if you make the pancakes, you really need to make the syrup that goes along with it.  It's super easy and when you add the baking soda, it gets all foamy so you can impress your kids with a little science.

Ingredients

  • For the Buttermilk Syrup:
  • ¾ cup buttermilk
  • ½ cup unsalted butter
  • 1 cup sugar
  • ½ teaspoon baking soda
  • 1 teaspoon pure vanilla extract
  • For the Buttermilk Pancakes:
  • 2 cups all-purpose flour
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ¼ teaspoon cinnamon
  • 2 cups buttermilk
  • 2 eggs
  • ¼ cup sour cream
  • 3 tablespoons unsalted butter melted and slightly cooled
  • 1 teaspoon vanilla
  • Additional butter for greasing griddle

Instructions

  • For the Buttermilk Syrup:
  • Combine butter, buttermilk, and sugar in small saucepan over medium heat.
  • Bring to a boil, then let boil for 1 minute.
  • Remove from heat and add baking soda and vanilla, stirring to combine. It will foam up when you add the baking soda.
  • Set aside and make the pancakes.
  • For the Buttermilk Pancakes:
  • Combine flour, sugar, baking powder, baking soda, salt, and cinnamon. Whisk together and set aside.
  • In separate bowl, combine buttermilk, eggs, sour cream, melted butter, and vanilla, and whisk together until well combined.
  • Add to dry ingredients and mix with spatula until just combined.
  • Don't over mix or they won't be the fluffiest pancakes ever! A few lumps are okay.
  • Heat a griddle over medium-medium low heat (level 4 worked best on my stove).
  • Add ~1 tablespoon of butter to griddle and drop ¼ cup of batter for each pancake.
  • Cook 3-4 minutes, until bubbles are forming on the top, then flip pancakes.
  • Cook another 1-2 minutes.
  • Store in warm oven until all pancakes are cooked.
  • Serve topped with buttermilk syrup.
  • Enjoy!

  2. I'm 17.5 weeks pregnant and people have just started to notice my bump this week too! It's seriously like it popped up overnight. So weird! I'm also a physical therapist and it's recently become uncomfortable for me to demonstrate any prone exercises. Yay for baby bumps 🙂

    1. So funny how that happens! I just noticed that I can't demonstrate prone exercises yesterday...I went to show a patient an exercise prone on an exercise ball and it was NOT comfortable! Haha 🙂

    Sooo, I tend to compare my pancakes to Perkins, because those are my fave. I have tried various recipes and can never get the same taste. In your opinion, do these have similar taste? haha That may be a good or bad thing to others, I'm just curious 🙂

    1. Thanks Emily! Honestly, it's been years since I've been to Perkins...there's just not one near my house anymore! So I can't say how they compare...I'm sorry! But we just made them again this weekend so I think I can say we are officially obsessed 🙂
