Birthday Cake Rice Krispie Treats
Birthday Cake Rice Krispie Treats are a fun birthday treat made with Rice Krispie cereal and funfetti cake mix! This easy no bake dessert is perfect for kids and celebrations!
I like birthday cake, but I especially love birthday cake flavored desserts. Whether it's Funfetti Ice Cream Sandwich Bars, Funfetti Cake Mix Cookies, or homemade Dunkaroo Dip, I just can't get enough!
Cake batter is also a popular flavor with the kids, so I was super excited to make these Birthday Cake Rice Krispie Treats for Lars' birthday week. Especially since he's not a fan of cake because of the frosting!

Why You'll Love This Recipe
- Easy - this recipe for Rice Krispie treats is just as easy as the traditional recipe - you just add cake mix!
- Great for Crowds - this is a really fun and delicious dessert recipe to bring to a gathering or potluck.
- Festive - this is super festive with the sprinkles and you can use whatever color is appropriate for the current season!
Ingredients
Butter - salted or unsalted butter work in this recipe.
Mini Marshmallows - I used one whole 10 ounce bag of marshmallows to melt with the butter and then 1 ½ cups from another bag to mix in so there are chunks of marshmallows throughout the bars.
Cake Mix - this adds the birthday cake flavor to the bars!
Crispy Rice Cereal - this is a classic ingredient in Rice Krispie bars and makes them crunchy and airy.
Sprinkles - Sprinkled on top for a fun and festive birthday look.
Variations
Different Cake Mix - you could mix it up and use another flavor of cake mix rather than funfetti. You can use white cake mix or yellow cake mix for classic cake flavor, or chocolate, strawberry, lemon, or red velvet for a fun and unique variation.
Festive Sprinkles - while I used rainbow sprinkles for a birthday, you could use a holiday themed variety of sprinkles. Christmas, 4th of July, Halloween, Easter, and Valentine's Day would all be fun! Check out my Christmas Rice Krispie Truffles for a fun and festive Rice Krispie treat.
Add Vanilla or Almond - you can definitely add 1-2 teaspoon of vanilla extract or almond extract for extra flavor.
Line the Baking Dish - I just liberally grease the baking pan with cooking spray. Alternately, you can line your dish with parchment paper or foil, still greasing it, but this will allow you to easily lift the bars out of the pan.
Frosting - if you want to make these even more birthday cake-like, you can drizzle the bars with melted white chocolate or semi-sweet chocolate chips for a frosting-like addition!

Expert Tips
Storage - store in an airtight container or cover the pan tightly with plastic wrap and store at room temperature for 3-4 days.
Microwave Version - you can make these in the microwave if you don't want to do it on the stovetop. To do this, add the butter and marshmallows to a microwave safe bowl. Microwave on high for 1 minute. Remove from the microwave and stir. Microwave again for 30 seconds and stir. At this point they should be mostly melted. You want them just melted, not overcooked so if they are not melted at this point, microwave in 15 second intervals to get them completely melted. Then stir in the cake batter mix and Rice Krispies and follow recipe instructions.
Recipe FAQs
It's not necessary to refrigerate these bars, and doing so could make them too hard or dry them out. I recommend covering tightly and storing them at room temperature.
In a regular sized box, there are typically about 10 cups of cereal, so that will be plenty for this recipe.
I think they are best eaten the day of, but you can make them one day in advance. They do last for 3-4 days but will not be quite as fresh.
If you're concerned about consuming the cake batter mix raw, you can sprinkle it on a lined baking sheet and bake for 3–5 minutes at 350°F (177°C) before using in the recipe. The heat should kill any bacteria.
