Funfetti Ice Cream Sandwich Bars

I've been trying to make ice cream cookie sandwiches for a couple of years now, but I always come up short. They're difficult to assemble and the ratio of cookie to ice cream has been off. That's where these ice cream cookie bars come in - they involve much less prep work and the ratio of cookie bar to ice cream is perfect! How to Make Funfetti Ice Cream Sandwich Bars
These Funfetti Ice Cream Sandwich Bars are super fun to make and they're so easy to make, the kids can get involved! Soren loved helping me make them. To start, combine a box of funfetti cake mix with two eggs and ⅓ cup of vegetable oil. The mixture will be thick, like cookie dough.
Line a jelly roll pan with foil and grease it well with cooking spray. Press the cookie dough into the pan to create a thin bar. This step will take a little while and might seem like it will never spread thin enough, but it will! Bake for 10 minutes in a 350 degree F oven. Let it cool completely.
While you are prepping the bars and they are cooking, let the carton of ice cream partially thaw and then spread it into a 9x13" baking dish that is lined with foil. You want to spread it out as evenly as possible, then return it to the freezer so it can freeze completely.
Once the cookie bar has cooled, cut it in half into two sheets. Place the ice cream (it should easily lift from the pan with the foil) on top of one of the sheets of cookie bars and then top with the second one. Press the top down to secure it to the ice cream.
Cut them into bars, working quickly so the ice cream doesn't melt too much. Either serve immediately or freeze until ready to eat!

Store these ice cream cookie sandwich bars in an airtight Tupperware container. Place parchment paper between layers of the bars to avoid them sticking together.

Funfetti Ice Cream Sandwich Bars
Ingredients
- 1 box funfetti cake mix
- 2 large eggs
- ⅓ cup vegetable oil
- 48 ounce carton birthday cake ice cream
Instructions
- Preheat the oven to 350 degrees F.
- Line a 10x15" jelly roll pan with foil and grease well.
- In a bowl, mix together the cake mix, eggs, and oil.
- Spread the mixture out on the jelly roll pan. It will be quite thin.
- Bake in the preheated oven for 10 minutes.
- Cool completely.
- While the cookie bar base is baking and cooling, let the ice cream thaw partially, enough to spread.
- Line a 9x13" baking pan with foil and then spread the ice cream out in the pan. Return to the freezer and freeze for an hour.
- Once the cookie bars are cooled, cut the sheet in half.
- Place the sheet of frozen ice cream on one half of the bars and then top with the second half. If it doesn't fill the cookie sheet completely, press the top down a bit so it spreads out more.
- Cut into bars. Work quickly so the ice cream doesn't thaw too much!
- Freeze until ready to serve.
