Key Ingredients

Strawberries - I think using fresh strawberries works the best, especially when they are in season, just like in my Strawberry Arugula Salad.
Cream Cheese - this is a key ingredient in cheesecake and I always use full-fat cream cheese.
Heavy Cream - heavy cream is whipped until stiff peaks form and then folded into the strawberry cream cheese mixture for a light and fluffy cheesecake "filling."
Substitutions and Variations
Graham Cracker Swap - instead of crushed graham crackers you could crush up Golden Oreos, regular Oreos, chocolate chip cookies, Nilla Wafers, or really any time of cookie. I use a regular Oreo crust in my No Bake Strawberry Oreo Pie and I love the combination of Oreos and strawberries.
Different Berry - instead of strawberries, you could do this with raspberries or probably even blueberries.
Extra Sweet - the filling in these cheesecake cups are not overly sweet. If you want it sweeter, add another ¼-1/2 cup of powdered sugar.
Toppings - you could drizzle these with chocolate, caramel, or strawberry sauce or top with chopped nuts and crushed cookies.

How to Make Strawberry Cheesecake Cups

Step 1.
Crush the graham cracker crumbs in a food processor or in a baggie with a rolling pin.

Step 2.
Mix in the melted butter and sugar with the graham cracker crumbs.

Step 3.
Add the strawberries to a food processor and puree until blended and no chunks remain.

Step 4.
Add cold heavy cream to a medium glass bowl and whip until stiff peaks form.

Step 5.
In a large bowl, beat together softened cream cheese with powdered sugar until creamy.

Step 6.
Slow beat in the strawberry puree, until well combined.

Step 7.
Fold in the whipped cream until combined.

Step 8.
Add ~2 tablespoons of graham cracker crumbs to the bottom of each mini mason jar.

Step 9.
Evenly distribute the strawberry cheesecake filling among the mason jars.

Step 10.
Top with remaining graham cracker crumbs and more diced strawberries.
Expert Tips
Serving Suggestions - I made my strawberry cheesecake cups in mini mason jars, because it made them super easy to transport since they have lids. You could also use stemless wine glasses, plastic cups, glass tumblers or assemble it in one large bowl and people can scoop their own serving into smaller bowls.
Use Softened Cream Cheese - be sure you set out your cream cheese for at least 30 minutes at room temperature before using it. This will ensure that the cream cheese does not get lumpy.
Make Ahead - these strawberry cheesecake cups can easily be made ahead of time. I think they are best if you make the day prior and store in the refrigerator until you're ready to serve. Ingredients
For the graham cracker crust:
- 1 cup graham cracker crumbs from 1 sleeve of graham crackers
- 3 tablespoons butter melted
- 1 teaspoon sugar
For the strawberry cheesecake mousse:
- 2 cups fresh strawberries stems removed
- 1 cup heavy whipping cream
- 16 ounces of cream cheese
- ⅔ cup powdered sugar
- 1 teaspoon vanilla
- additional chopped strawberries for garnish
Instructions
For the graham cracker crust:
- In a medium bowl, combine graham cracker crumbs, butter, and sugar, and stir well to combine.
- Press into the bottom of mini mason jars.
To make the strawberry mousse:
- Place strawberries in a blender and puree until very few chunks remain.
- In a bowl with electric mixer, beat heavy whipping cream until stiff peaks form. Set aside.
- In a separate bowl with electric mixer, beat cream cheese with powdered sugar until fluffy, about 2 minutes.
- Slowly add strawberry puree, beating until well combined.
- Add vanilla, and beat until combined.
- Fold in whipped cream.
- Evenly distribute the strawberry cheesecake mousse between serving cups.
- Top with strawberries and additional graham cracker crumbs.
- Serve and enjoy!
