Strawberry Arugula Salad
Strawberry Arugula Salad is a fresh and healthy salad recipe with arugula, strawberries, red onion, goat cheese, and a homemade balsamic vinaigrette. It's perfect as a side salad or topped with some grilled chicken as a main dish!
I've been having a moment with arugula and I'm not lying when I say it's the reason I've been eating a ton of salads recently! I've always liked it but it wasn't until recently that I had it at a restaurant and realized - I can make salads like this at home! My favorite super simple way to eat it is tossed with cucumbers, Parmesan cheese, and this lemon dressing, but this Strawberry Arugula Salad is my new favorite!
This strawberry salad with arugula is perfect as a side dish but also delicious topped with grilled chicken, for a whole meal. It's the perfect summer salad that highlights a ton of fresh and seasonal ingredients!
Ingredients in Strawberry Arugula Salad
These salad ingredients are super fresh, healthy, and delicious and can be found at more grocery stores. Refer to the recipe card for the full ingredient list with specific quantities.
- Strawberries - sweet strawberries that are in season are the absolute best in this arugula salad!
- Fresh Arugula - I love the flavor of peppery arugula and it is so perfect in this salad. Baby arugula or regular arugula both work.
- Red Onion
- Goat Cheese - creamy goat cheese is so delicious in salads.
- Slivered Almonds - or really any nut you like. I think toasted pecans, pine nuts, sunflower seeds, sliced almonds, and walnuts would all be delicious.
- Balsamic Vinegar
- Extra Virgin Olive Oil
- Garlic
- Dijon Mustard
- Maple Syrup - maple syrup adds a bit of sweetness to the balsamic dressing. You could also use honey, if that's what you prefer/have on hand.
- Salt and Black Pepper
How to Make Strawberry Arugula Salad
To start, make the dressing. In a small bowl or (my preferred method) a mason jar, add olive oil, balsamic vinegar, maple syrup, dijon mustard, garlic, and salt. Either whisk well or put the lid on the mason jar and shake well.
Next, assemble the salad. Place the greens on a large platter, a large serving bowl, or a large salad bowl. Top with the sliced strawberries, red onion, goat cheese, and slivered almonds. Drizzle with the dressing and then toss lightly. Serve immediately. If you'd like to prep this in advance, simply plate the salad without the dressing, cover, and refrigerate. Then immediately before serving, drizzle and toss with the dressing.

- Blueberries, blackberries, sliced apples, or raspberries, instead of strawberries
- Feta cheese instead of goat cheese
- Toasted pecans, walnuts, or sliced almonds instead of slivered almonds
- Spring greens or baby spinach instead of arugula
- Add some grilled chicken or grilled steak for extra protein

Strawberry Arugula Salad
Ingredients
- 5 ounces arugula
- 16 ounces strawberries sliced
- ¼ red onion thinly sliced
- 4 ounces crumbled goat cheese
- ¼ cup slivered almonds
Balsamic Vinaigrette
- 6 tablespoon olive oil
- 2 tablespoon balsamic vinegar
- 2 tablespoon maple syrup
- 1 tablespoon dijon mustard
- 2 cloves garlic minced
- ½ teaspoon salt
Instructions
- In a large salad bowl or platter, layer the arugula, sliced strawberries, onion, goat cheese, and almonds.
- In a small bowl or mason jar, add the dressing ingredients and stir well until combined. I like to put the lid on a mason jar and shake it to combine the ingredients well.
- Drizzle the dressing over the salad, toss lightly, and serve immediately.
