Eggnog is one of my favorite holiday treats and while I could throw back an entire carton by myself, I like to bake with it too. I’ve used it to make scones, biscotti, cheesecake, cookies, and these eggnog muffins. With streusel topping, obvs. They are super easy to whip up, and the extra step of making the streusel is so worth it. How to Make Eggnog Muffins
Eggnog Muffins are really easy to make, with pantry staples! First, start by beating together room temperature butter and sugar until they are combined. Next, add the eggs and vanilla, beating until combined.
Next, add the baking powder, cinnamon, nutmeg, and salt and mix until combined. Now add half of the flour, and mix until combined, followed by half of the eggnog, mixing until just combined. Repeat with the remaining flour and eggnog, mixing until just combined.
Pour into a greased muffin pan, and then make the streusel! For the streusel, combine melted butter, sugar, flour, and nutmeg and mix to combine. Sprinkle on top of the muffins and then bake for 16-20 minutes, until the tops are golden and baked through.
