French toast for a crowd usually means standing at the stove flipping slices while everyone else eats. This Slow Cooker French Toast Casserole skips all of that. You cube a loaf of brioche, whisk together a simple custard, spoon a buttery cinnamon brown sugar topping over the top, and let the slow cooker handle it.
It's easy, family friendly, and works just as well for breakfast for dinner on a busy weeknight as it does for a slow weekend morning. [ADD a real family detail here: who ate it, what they said, the morning you made it.]

Why You'll Love This Recipe
Make Ahead - assemble it the night before, and in the morning all you do is turn on the slow cooker.
Frees Up Your Oven - great for holiday mornings when the oven is already full of ham, bacon, or cinnamon rolls.
Simple Ingredients - brioche, eggs, milk, and pantry staples you probably already have.
Feeds a Crowd - one 6-quart slow cooker is enough for the whole family, with leftovers.
Key Ingredients

Brioche Bread - rich, buttery, and a little sweet. It soaks up the custard without falling apart, so the casserole stays soft instead of mushy.
Eggs - the base of the custard that holds everything together.
Whole Milk - gives the custard a creamy texture without being too heavy.
Maple Syrup - adds sweetness and that classic French toast flavor right into the custard.
Brown Sugar - used in both the custard and the topping for a deeper, caramel-like sweetness.
Vanilla Extract and Cinnamon - the warm flavors that make it taste like French toast.
Butter - melted and mixed with brown sugar and cinnamon for the topping.
Refer to the recipe card for the complete list of ingredients and amounts.
Substitutions and Variations
Different Bread - challah, French bread, or Texas toast all work if you can't find brioche.
Add Fruit - stir in blueberries or diced apples with the bread cubes.
Add Nuts - ½-1 cup of chopped pecans would be delicious.
Add Nutmeg - a pinch in the custard adds a little extra warmth.
Switch Up the Toppings - serve with fresh berries, whipped cream, powdered sugar, or extra maple syrup.
How to Make Slow Cooker French Toast Casserole

Step 1.
In a large bowl, whisk together the eggs, milk, maple syrup, brown sugar, vanilla, cinnamon, and salt.

Step 2.
Grease your slow cooker with butter or cooking spray and add the cubes of Brioche. Pour the egg mixture over the bread and gently press the bread down so it soaks up the custard.

Step 3.
Melt the butter, then stir in the brown sugar and cinnamon.

Step 4.
Spoon the topping evenly over the casserole. Cook on high for 2 ½ to 3 hours or low for 4-5 hours, until the center is set. Serve and enjoy!
Expert Tips
Make It the Night Before - assemble the casserole in the slow cooker insert, cover it, and refrigerate overnight. In the morning, let it sit out for 20-30 minutes to warm up a bit and then put the insert in the base and cook as directed.
Use Slightly Stale Bread - day-old brioche soaks up the custard better and holds its shape.
Don't Lift the Lid - every peek lets heat escape and adds cooking time.
Know Your Slow Cooker - every model runs a little different, so start checking at the low end of the cook time. The edges will set and brown before the center.
Press the Bread Down - make sure every cube touches the custard so you don't end up with dry pieces on top.
Storage - Store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat individual servings in the microwave.

Brioche is my favorite because it's rich and sturdy enough to soak up the custard. Challah, French bread, or Texas toast also work.
