Slow Cooker French Toast Casserole

This Slow Cooker French Toast Casserole turns a loaf of brioche, eggs, milk, and maple syrup into a soft, custardy breakfast with a buttery cinnamon brown sugar topping. You can prep it the night before, and your slow cooker does the rest while you get everyone out of bed.

Ingredients

French Toast Casserole

  • 17 ounce loaf brioche cubed
  • 8 eggs
  • 2 ½ cups whole milk
  • ¼ cup maple syrup
  • ¼ cup brown sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • ½ teaspoon salt

Topping

  • ¼ cup butter melted
  • ⅓ cup brown sugar
  • ½ teaspoon cinnamon

Instructions

  • Note: you can prep this the night before. Grease a 6-quart slow cooker.
  • Add the cubed brioche to the slow cooker.
  • In a large bowl, whisk together the eggs, milk, maple syrup, brown sugar, vanilla, cinnamon, and salt.
  • Pour the egg mixture over the bread and gently press the bread down to soak.
  • Stir the brown sugar and cinnamon into the melted butter and spoon evenly over the top. If prepping the night before, remove the insert, cover, and refrigerate.
  • If refrigerated overnight, let it sit at room temperature for 20 to 30 minutes. Cover and cook on high for 2 ½ to 3 hours or on low for 4 to 5 hours, until the center is set.

Notes

To make ahead, assemble, cover, and refrigerate overnight. In the morning, take it out of the fridge and let it sit for 20-30 minutes to warm up a bit, and then cook as directed.
