Ingredients

Boursin Cheese - this gives the pasta. ton of flavor and makes it creamy.

Grape Tomatoes - these are roasted which really brings out their flavor, and also soften to become part of the sauce.

Fresh Garlic and Shallot - add amazing flavor to the pasta sauce.

Extra Virgin Olive Oil - used to roast the tomatoes and cheese.

Baby Spinach - I add this to this pasta dish to pack it with some vegetables and nutrients.

Fresh Basil - basil if one of my favorite fresh herbs and it is so delicious in this pasta.

Shredded Parmesan Cheese

Please refer to the recipe card for complete list of ingredients.

Variations

Different Cheese - I've made this with shredded Italian cheese as well as shredded mozzarella cheese, both with good results. I do like the sharp flavor that Parmesan adds.

Different Pasta - this pasta will really work with any pasta shape. I love a longer shape like spaghetti, fettuccine, or angel hair, but others like penne, rigatoni, elbow, and rotini would work too. You can also easily use gluten-free pasta.

Different Type of Tomatoes - I typically use cherry or grape tomatoes but you can use bigger tomatoes and just chop them before baking them.

Different Type of Soft Cheese - you can use any variety of Boursin cheese that you prefer or have access too. This recipe will also work with feta, goat, and even cream cheese.

Add Protein - you could add some shredded chicken, canned chickpeas, Italian sausage, or cooked shrimp to the pasta for some protein.

Add Veggies - you can adapt this to match what season you are making it in. You could use butternut squash instead of tomatoes, and form a butternut squash Boursin pasta sauce. Or you could roast up vegetables like zucchini, mushrooms, broccoli, or bell pepper, and toss it in with the pasta at the end. In addition, you could use other greens like kale or chard instead of fresh spinach.

Add Some Spice - if you want to add a little bit of heat to the pasta, you can add a pinch or two of red pepper flakes.

Lemon - add a bit of lemon flavor by giving a squeeze of half a lemon to the sauce or a teaspoon of lemon zest.

Step by Step Instructions

Photo 1. Add the tomatoes, garlic, and shallots to a 9x13" baking dish. Drizzle with olive oil and season with salt and pepper. Toss to combine.

Photo 2. Add the rounds of Boursin cheese, nuzzling them in between the tomatoes. Cover with foil and bake in a 350 F degree oven for 35 minutes. Meanwhile, bring a pot of water to boiling and cook the pasta according to package directions. When you drain the pasta, be sure to reserve ½ cup of pasta water for the sauce.

Photo 3. Remove the foil and add the chopped salad, stirring it in with the tomatoes and cheese a little. Cover again with foil and bake for 10 more minutes.

Expert Tips

Serving Suggestions - I like to keep this dinner simple and serve it with some garlic bread and a simple side salad. It would also be delicious with a Strawberry Arugula Salad or Pomegranate Apple Salad if you want a salad that is also a showstopper. You could also serve it with some roasted broccoli or Parmesan Brussels Sprouts.

Storage - store any leftovers in an airtight container in the fridge for 2-3 days.

Recipe FAQs

Can this be made ahead of time?

This dish is best made at the time and I would not recommend making it ahead of time.

Why do I have to save pasta water?

Pasta water is full of starch from the pasta that cooked in it, and is a natural thickener. This helps the sauce come together without using any cream.

Can this Boursin pasta be made gluten-free?

Definitely. Simply use gluten-free pasta.
