Parmesan Brussels Sprouts are an addictive side dish made with only a handful of ingredients! Brussels sprouts are tossed in olive oil, butter, grated Parmesan cheese, breadcrumbs, garlic, and salt and roasted to crispy perfection!

I am a huge fan of brussels sprouts, cooked in pretty much any way. I've liked them since I was a kid (my grandparents once got me a bag of frozen brussels sprouts for my birthday...as a joke...but because they knew I loved them so much!), and my love for them has only grown. While back then I used to love them steamed with butter, but these days, roasted brussels sprouts are my favorite. Particularly, Parmesan Brussels Sprouts!

These are also a delicious Thanksgiving side dish, along with Cream Cheese Green Bean Casserole.

  • Brussels Sprouts - fresh, not frozen.
  • Olive Oil
  • Butter
  • Fresh Garlic
  • Breadcrumbs
  • Grated Parmesan Cheese - shredded Parmesan works, too but I like freshly grated best in this recipe.
  • Salt

How do you roast brussels sprouts?

It's so easy! Start by trimming the brussels sprouts. Cut off the end and then cut each one in half. Remove any loose leaves. Then simply toss the trimmed brussels sprouts in the olive oil, butter, garlic, Parmesan, breadcrumbs, and salt, and place on a baking sheet. Bake in a 400 degree oven for 20-25 minutes, until they're perfectly crispy! Pro tip: make sure the brussels sprouts have enough space on the baking sheet so they aren't overcrowded. If they're overcrowded, you run the risk of them teaming theirselves instead of roasting.

Can I use frozen brussels sprouts?

This parmesan brussels sprouts recipe really does work best with fresh brussels sprouts.

Can this be prepped in advance?

You can prep the brussels sprouts in advance, but I would roast them right before serving them.

What should I serve with Parmesan Brussels Sprouts?

These are delicious with this Sous Vide Filet Mignon, Creamy Mushroom Chicken, Air Fryer Butternut Squash, or Pecan Crunch Salmon. They are also a great side dish along with Air Fryer Spaghetti Squash and Air Fryer Butternut Squash!

Ingredients

  • 1 lb brussels sprouts ends trimmed and halved
  • 2 tablespoon olive oil
  • 2 tablespoon butter melted
  • 2 cloves garlic minced
  • ¼ cup shredded Parmesan cheese
  • ¼ cup breadcrumbs
  • ½ teaspoon salt

Instructions

  • Preheat the oven to 400 degrees F.
  • Drizzle a little olive oil on a baking sheet.
  • In a large bowl, combine the brussels sprouts, olive oil, butter, garlic, Parmesan cheese, garlic, breadcrumbs, and salt, and stir well to combine.
  • Spread onto greased baking sheet and bake in the preheated oven for 20-25 minutes.
