I have been making spaghetti squash for years now, as I love the lower carb and nutrient dense alternative to spaghetti noodles. Not only that, but it's also delicious and so versatile. It takes on any flavor you add to it.

The only downside? It takes awhile to cook. Well, until now that is! The air fryer is here to the rescue, and cooks spaghetti squash in only 20 minutes. This Air Fryer Spaghetti Squash recipe is also easy, delicious, and healthy!

Spaghetti Squash - when cooked, spaghetti squash results in spaghetti-like strands that can be used in so many different ways, even in curry like in my Lentil Coconut Curry Stuffed Spaghetti Squash.

Olive Oil - I use extra virgin olive oil for this recipe.

Salt

Garlic Powder - garlic powder adds some flavor to this squash, but keeps it very versatile. Garlic goes with everything!

Recipe Variations

Add more spices. This is a very basic and versatile recipe for spaghetti squash. You can add spices like Italian seasoning, paprika, or cayenne pepper. You could also add some fresh herbs like parsley, cilantro, or basil.

Add more cheese. At the end, you could add shredded mozzarella, goat cheese, or feta cheese, to make the spaghetti squash super cheesy.

Recipe Instructions

As mentioned, this Air Fryer Spaghetti Squash recipe is beyond easy. The most difficult part is cutting the spaghetti squash in half!

Prep the squash. Cut the spaghetti squash in half and scoop out the seeds.

Brush the squash with olive oil and then sprinkle with garlic powder and salt.

Place the squash in the air fryer and cook at 375 degrees for 20 minutes.

After 20 minutes, remove the squash from the air fryer and, using a fork, comb the sides of the squash to create spaghetti-like strands.

What kind of air fryer do I need?

You really just need an air fryer that fits half of a spaghetti squash. My air fryer only fits one half at a time, but there are definitely other versions that fit both.

Why is spaghetti squash so difficult to cut?

Spaghetti squash can be very hard to cut! If you want to make it easier, pierce some holes in it with a fork and then microwave for 2 minutes. This will make it easier to cut in half.

Ingredients

  • 1 spaghetti squash
  • 2 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • 2 tablespoon butter
  • ½ cup shredded Parmesan cheese

Instructions

  • Cut the spaghetti squash in half the long way.
  • Scoop the seeds from each half.
  • Brush the halves with olive oil and sprinkle with garlic powder and salt.
  • Place one or both halves in the air fryer, cut side up. This will depend on how large your air fryer is. Mine only fits one half.
  • Cook at 375 degrees for 20 minutes.
  • Using a fork, scrape the edges of the squash to form spaghetti-like strands.
  • Top with Parmesan cheese and butter, or your desired sauce.
  • Enjoy!

Notes

  • If your spaghetti squash seems too hard to cut in half, poke some holes in it with a fork and then microwave for 2 minutes. This will soften it and make it easier to cut. 
  • My favorite way to eat spaghetti squash is topped with butter and Parmesan cheese or marinara. 
  • Store leftovers in an airtight container in the fridge for 2-3 days. I like to scrape the strands from the squash before refrigerating.
