Soren got up at 5 this morning, which is pretty typical of him, but then he didn’t go back to sleep, which is definitely atypical. His usual schedule is to sleep from 7 p.m.-5 a.m. then he wakes up, feeds, and goes back to bed until 6:30/7 a.m. I could do without that 5 a.m. feeding but it’s fine for now. Except, yeah. Today he didn’t go back to sleep.

You might laugh at how easy it is. You just throw a hunk of beef, some Italian dressing mix, beef broth and pepperoncini peppers in the Instant Pot and let it do it’s thang.
Once the Italian beef in the Instant Pot is fork tender after about an hour, you just shred it up and load it onto some toasted hoagies and top it with cheese. We also like to spoon some of the juices on top for an little extra oomph in our Instant Pot Italian Beef Sandwiches. You could even put some in a little side dish to dip it in. SO good!
Definitely! To make this Instant Pot beef into a freezer, meal I would simply put the beef, Italian dressing mix, pepperocini peppers, and beef broth into a freezer bag. When you’re ready to cook, simply take it out of the freezer the night before to let it thaw in the refrigerator, and then follow the remaining instructions.
We will definitely be putting this Instant Pot Italian Beef on our regular rotation this fall and winter! I’m actually thinking of making it into a freezer meal, because why the heck not!?
