Homemade McGriddle Sandwiches
It's time to bring the drive-through into your home kitchen! Homemade McGriddle Sandwiches have an egg and sausage patties topped with American cheese between two fluffy pancakes. These are easy to meal prep for a delicious breakfast all week long.

Breakfast is my absolute favorite meal of the day. It can be so versatile - sweet muffins and pancakes (Cinnamon Roll Pancakes anyone?!), and savory eggs and toast. I also love a sweet and savory combination, which is why these Homemade McGriddle Sandwiches are right up my alley!
Luckily, with this recipe we no longer have to go through the drive through to get our McGriddle sandwich. These sandwiches can be made easily with sheet pan eggs, pancakes made with a pancake mix, and chicken sausage patties. Ingredients
Eggs - This recipe uses 18 (!!) eggs, which contain important nutrients for brain health including choline and lutein and are a great source of high quality protein which helps maintain muscle and support bone growth.
Milk - combined with the eggs for the sheet pan eggs.
Pancake Mix - I use Krusteaz pancake mix which only requires water to be added. I always get super fluffy and yummy pancakes when using this pancake mix!
Maple Syrup - I add a little bit of maple syrup to the pancake batter to give the McGriddle a sweet maple flavor.
Chicken Sausage - I used chicken sausage patties, but any type of sausage patty can be used.
American Cheese - this type of cheese is super melty and delicious on these breakfast sandwiches!
Variations
- Cook your eggs differently. You could make traditional scrambled eggs, poached eggs, or fried eggs, if you'd like! I love the sheet pan egg method because it is efficient for cooking a LOT of eggs at one time.
- Use bacon. These McGriddle Sandwiches can definitely be made with bacon instead of sausage. Or you can double up the meat and use both!
- Homemade pancakes. If you have a homemade pancake recipe that you love, you can definitely use that one instead. Or use my Fluffy Buttermilk Pancake recipe! I like using the mix for these sandwiches for the sake of ease.
Step by Step Instructions
- To start, cook the eggs. To a blender, add the eggs, milk, salt, and pepper. Blend until well combined.
- Grease a baking sheet with cooking spray, top with parchment paper, and then grease with more cooking spray.
- Pour the egg mixture on the prepared baking sheet. Bake in a 350 degree oven for 15-17 minutes. The eggs should be set.
- While the eggs are baking, you can make the pancakes and sausage.
- Prepare the pancake mix according to package direction. I made 16 pancakes for 8 McGriddle sandwiches. Cook on a griddle according to the package directions. I recently bought a pancake mold, which makes perfectly round pancakes!
- Cook the sausage in a large skillet until cooked through.
- Cut the cooked eggs into individual portions. I use my pancake mold, which worked perfectly making them the same size as the pancakes. You can also use a round biscuit cutter or just a pizza cutter to make them into squares.
- Now it's time to assemble! Place one egg patty on top of one pancake. Then top with a sausage patty, American cheese slice, and another pancake. You can either let the heat from the sausage and pancake melt the cheese, or pop the sandwich in the oven for 4-5 minutes. Enjoy!

Homemade McGriddle Sandwiches
Ingredients
Sheet Pan Eggs
- 18 large eggs
- ⅓ cup milk
- ½ teaspoon salt
- ½ teaspoon black pepper
Pancakes
- 2 cups pancake mix (I use Krusteaz pancake mix - you can use whatever kind you like and use the amount that will make 14-16 pancakes)
- 1 ¾ cup water again, follow specific pancake mix directions. This amount is if using Krusteaz
- 1 tablespoon maple syrup
Sausage
- 6 chicken sausage patties
Cheese
- 6 slices American cheese
Instructions
Sheet Pan Eggs
- Preheat the oven to 350 degrees F.
- Add the eggs, milk, salt, and pepper to a blender and blend until smooth.
- Grease a large baking sheet with cooking spray. Line baking sheet with parchment paper and then grease the parchment paper.
- Pour the egg mixture on top of the prepared baking sheet.
- Bake in the preheated oven for 15-17 minutes.
Pancakes and Sausage
- While the eggs are baking, prepare the pancakes and sausage.
- Make the pancakes according to the pancake mix box and then cook according to box directions.
- Heat a large skillet and cook the sausage until cooked through.
Assemble
- Cut the sheet pan eggs in squares using a knife or pizza wheel or use a biscuit butter or pancake mold to cut unto circles.
- Top half of the pancakes with an egg patty, sausage patty, slice of cheese, and another pancake.
- Either let the heat from the sausage and pancakes melt the cheese, or place in the oven for 4-5 minutes to melt the cheese.
- Enjoy!
Notes
- Store leftovers in an airtight container in the fridge for 2-3 days.
- You can also freeze these. Wrap tightly in plastic wrap first and then foil. Freeze for up to 2 months. To reheat, microwave on 50% heat for 2-3 minutes.
