Cottage cheese has been a favorite of mine ever since I was a kid. I remember my grandparents serving it with either salt and pepper or topped with peaches. I definitely prefer a more savory version of cottage cheese, like this Avocado Cottage Cheese Toast.

I am also a huge fan of Avocado Toast (like my Summer Vegetable Avocado Toast!) so it just seemed natural to combine cottage cheese toast and avocado toast! While I could've just spread some straight up cottage cheese on a piece of toast, I wanted to make it a bit fancier so I decided to make whipped cottage cheese.

Ingredients

Cottage Cheese - I use 2% milk fat cottage cheese.

Lemon Zest - just a bit adds a zip of bright lemony flavor that makes this cottage cheese toast so delicious, just like it does in my Lemon Shrimp Pasta.

Sea Salt and Pepper - since cottage cheese is quite salty on its own, the salt is added to taste. I love pepper on my cottage cheese and love the flavor it adds to this avocado cottage cheese toast.

Avocado - You can mash or slice your avocado for this toast. I also love avocado in my Grilled Vegetable Quinoa Bowls with Avocado Basil Sauce.

Bread - use your favorite bread that you love to toast up! Sometimes I use English muffin bread and sometimes I use a super hearty 9-grain bread from a local bakery.

Variations

Add some spice. You could add a pinch of red pepper flakes, a teaspoon of hot honey, or your favorite hot sauce to the cottage cheese.

Add more veggies. I love adding some sliced tomatoes and pickled onions to this toast, as well.

Put an egg on it. This cottage cheese toast is delicious with a fried egg on top.

Change up the toppings. Keep things simple with just a drizzle of honey or Everything Bagel Seasoning, or make it even fancier with some lox, cucumber, and dill on top!

Believe it or not, this recipe takes less than 5 minutes to make! Pro tip: make the whipped cottage cheese ahead of time and have it on hand for a protein packed breakfast all week!
