Cookies...for breakfast! Is this real life?! I've always *thought* about having cookies for breakfast, but I never actually have done that. Okay, maybe a few times I have. But how great would to be to eat cookies for breakfast and feel really good about it? Oatmeal Breakfast Cookies make that possible!
Oatmeal Breakfast Cookies are filled with peanut butter, oats, dried cherries and pecans, and slightly sweetened with honey! They are super delicious, healthy, and the ultimate grab and go breakfast item!
Ingredients in Oatmeal Breakfast Cookies
- Peanut Butter - I like using natural peanut butter in these breakfast cookies, as it doesn't have any added sugar. I prefer creamy peanut butter, but chunky will work, too.
- Honey
- Banana
- Vanilla
- Egg
- Cinnamon
- Salt
- Old Fashioned Oats - this recipe has only been tested with old fashioned oats, so that is definitely what you want to use! Quick oats will not yield the same results.
- Dried Cherries
- Chopped Pecans
How to Make Oatmeal Breakfast Cookies
These cookies are really easy to whip up. To start, mix together the peanut butter, honey, vanilla, egg, mashed banana, cinnamon, and salt. Once this is a uniform consistency, fold in the oats, dried cherries, and chopped pecans. Form into large cookies about ¼ cup in size, and bake for about 12 minutes in a 325 degree oven.
Are Breakfast Cookies Good for Kids?
Yes! As long as your child is old enough to eat the consistency of a cookie and able to have honey (so older than 1 year old, these are great for kids! My kids love having these for breakfast because they think they're getting a treat for breakfast. Only I know they're also getting some whole grains, protein, and nutrients, too!
Are Breakfast Cookies Gluten Free?
If you use gluten free oats, then yes they are gluten free! The rest of the ingredients are all naturally gluten free.
Can These Breakfast Cookies Be Made Without Banana?
This specific recipe for Oatmeal Breakfast Cookies was developed with a banana, to allow no oil and less sugar to be used.
Can a Different Nut Butter Be Used?
Yes. You can use almond butter instead of peanut butter, if you'd prefer!

Oatmeal Breakfast Cookies
Ingredients
- 1 cup peanut butter
- ¼ cup honey
- 1 teaspoon pure vanilla extract
- 1 banana mashed
- 1 large egg
- ½ teaspoon ground cinnamon
- 2 cups old fashioned oats
- ½ teaspoon salt
- ½ cup dried cherries, cranberries, or raisins
- ½ cup chopped pecans
Instructions
- Preheat oven to 325 degrees F. Line a baking sheet with parchment paper.
- In a large bowl, whisk together the peanut butter, honey, vanilla, mashed banana, egg, cinnamon, and salt until well combined.
- Fold in the oats, dried cherries, and pecans.
- Form into ¼ cup cookie dough balls and place on prepared baking sheet.
- Bake in preheated oven for 12-14 minutes.
