Kodiak Cakes Muffins

Kodiak Cakes Muffins are my go-to muffin recipe for easy and delicious muffins for the family! These are so easy to make and uses Kodiak Cakes Power Cakes Waffles and Flapjack Mix. This pancake mix is packed with protein and whole grains, which makes for super healthy muffins! Paired with a Strawberry Cottage Cheese Smoothie or Cottage Cheese Egg Bites, these are perfect for a protein-filled breakfast.

We are big fans of Kodiak Pancake Mix for delicious and healthy pancakes. Did you know that the pancake mix can also be used to make muffins?! My Kodiak Blueberry Muffins are another family favorite and I have been making a batch of these OG Kodiak Cake Muffins every week to have for an easy quick breakfast on busy mornings that packs some extra protein.

Kodiak Cake Flapjack and Waffle Mix - this is of course the main ingredient in these healthy muffins. This mix is full of whole grain wheat flour, protein, and fiber.

Maple Syrup - maple syrup sweetens the muffins but not overly so, just like in my Perfect Butternut Squash Muffins. These healthy muffins are lightly sweetened and then studded with some chocolate chips!

Cinnamon - a teaspoon of cinnamon adds some warm flavor to these muffins.

Milk - I used almond milk this time have used regular cow's milk too.

Semi-Sweet Chocolate Chips - I think mini chocolate chips work best in this recipe, especially for kids, but really any type of chocolate chips will work!

Substitutions and Variations

Add-ins - My kids and I both love the addition of mini chocolate chips but you can definitely adapt this to your preference. Blueberries, chopped berries, or chopped nuts would all be delicious options.

Swap out the sweetener - I used maple syrup but honey would also work.

How to Make Kodiak Cakes Muffins

Photo 1. In a large mixing bowl, mix together the melted butter, maple syrup, and vanilla until well combined. Stir in the milk.

Photo 4. Divide the muffin batter between 24 cupcake liners in a muffin pan. Alternately, you can spray a muffin pan with nonstick spray and skip the cupcake liners. I like my silicone cupcake/muffin liners as they are reusable and work really well. They should be about ¾ the way full. Bake in the 350 degree oven for 20-22 minutes.

Note: I have made these as regular muffins and mini muffins. To make them into mini muffins, reduce the baking time to 12-14 minutes.

Expert Tips

Buy Kodiak Pancake Mix in Bulk - I buy Kodiak Pancake Mix at my local Costco which is great because it is so much more affordable in bulk. Compared to regular pancake mixes, Kodiak Power Cakes mixes have so much more going for them, such as being made with whole grains and having 14 grams of protein per serving in the form of whey protein isolate. Whole grains offer extra vitamins, minerals, and fiber and the protein helps fill you up.

Serving Suggestion - You can serve these yummy Kodiak Cake muffins plain but they are also delicious spread with some butter or Greek Yogurt, drizzled with honey, or slathered with peanut butter or almond butter, like my Greek Yogurt Chocolate Banana Muffins and Zucchini Banana Muffins.

Storage. Store leftovers in an airtight container at room temperature for 1-2 days for optimal freshness. You can keep them in the fridge for up to 5 days or freeze them in a freezer bag for up to 3 months. We love freezing them and having them as an easy healthy breakfast option. They go great with my Jalapeno Bacon!

Muffin liners. For this recipe you can use the paper muffin liners, silicone muffin cups, or grease the muffin tin. I definitely prefer using silicone muffin cups!

Can these Kodiak Cakes Muffins be made as mini muffins?

Yes! I have made these as regular muffins and mini muffins. To make them into mini muffins, reduce the baking time to 12-14 minutes.

Can a different type of pancake mix be used for these Kodiak Cake Muffins?

I haven't tried testing these muffins with any other muffin mix other than Kodiak Cakes, but I would guess it would work. If you do try it, be sure to let me know in the comments!

Can I substitute a different add-in for the chocolate chips?

Yes! You could use blueberries, pecans, walnuts, coconut, or dried fruit.

Are these Kodiak Cake Muffins vegan?

No. Most Kodiak Pancake Mix contains milk or eggs, but you can use a vegan pancake mix to make these vegan, along with using plant-based milk and oil and not butter.

Kodiak Cake Muffins

Ingredients

  • ½ cup vegetable oil or melted butter
  • ½ cup maple syrup
  • 1 teaspoon pure vanilla extract
  • ½ teaspoon cinnamon
  • 2 ½ cups milk
  • 4 cups Kodiak cake mix (there is a little more than 4 cups in the 18 ounce package - I measure out 4 cups)
  • 1 ½ cups mini semi-sweet chocolate chips

Instructions

  • Preheat the oven to 350 degrees F.
  • Line 24 muffin cups with silicone liners or paper liners. Alternately, you can spray with nonstick spray.
  • In a large bowl, whisk together the butter, maple syrup, vanilla, and cinnamon until well combined.
  • Stir in the milk, followed by the Kodiak cake mix, being careful not to overmix.
  • Fold in the chocolate chips.
  • Divide the muffin batter into the prepared muffin pans. They should be ~¾ the way full.
  • Bake in the preheated oven for 20 minutes.
  • Cool and enjoy!

    Awesome snack to whip up when I don’t have the time for fully homemade! I was weary of the bake time & temp since many recipes start with higher heat for better rise, but I followed the instructions and they turned out great - perfectly moist. Thank you!

    10 out of 10. I did mine with chocolate chips - randomly I have banana milk in the house (saw it in the store and have been wanting to try it in a muffin recipe ever since. This recipe was super simple to follow. I did 12 large cupcakes in a silicone thing and a mini loaf pan Thank you for the simple recipe

    Love the recipe, very easy to make and I was out of maple so I used brown sugar and still came out great. Will be doing this more often with different toppings too.

    These were great! We loved them and I love that they make 24 so they lasted a *little* longer! I decided to just use the whole box of mix and it turned out great. I also used the butter instead of oil. Will make again and again!

    Used some coconut oil - hit the milk and it solidified lol but i whisked quickly enough and added a bit of hot water and more mix
    Was great

  11. These turned out really well, but I put a couple in the fridge last night and froze the rest. This morning I put in microwave for 30 seconds and they completely changed. Flavor was different and the texture almost deflated. Any tips?
