Kodiak Cake Muffins
A muffin recipe made with protein-packed Kodiak Cake mix that is a perfect grab-and-go for busy mornings.

- ½ cup vegetable oil or melted butter
- ½ cup maple syrup
- 1 teaspoon pure vanilla extract
- ½ teaspoon cinnamon
- 2 ½ cups milk
- 4 cups Kodiak cake mix (there is a little more than 4 cups in the 18 ounce package - I measure out 4 cups)
- 1 ½ cups mini semi-sweet chocolate chips
Preheat the oven to 350 degrees F.
Line 24 muffin cups with silicone liners or paper liners. Alternately, you can spray with nonstick spray.
In a large bowl, whisk together the butter, maple syrup, vanilla, and cinnamon until well combined.
Stir in the milk, followed by the Kodiak cake mix, being careful not to overmix.
Fold in the chocolate chips.
Divide the muffin batter into the prepared muffin pans. They should be ~¾ the way full.
Bake in the preheated oven for 20 minutes.
Cool and enjoy!
Serving Suggestion. You can serve these yummy Kodiak Cake muffins plain but they are also delicious spread with some butter or Greek Yogurt, drizzled with honey, or slathered with peanut butter or almond butter!
Storage. Store leftovers in an airtight container at room temperature for 1-2 days for optimal freshness. You can keep them in the fridge for up to 5 days or freeze them in a freezer bag for up to 3 months.
