Cottage Cheese Egg Bites are a high-protein and easy breakfast idea that are great to meal prep! These are filled with diced ham and green onions, and are full of flavor.

I'm a big fan of eggs for breakfast, but don't always feel like making them every morning. While I love sweet breakfast options like my Peanut Butter Cup Chia Seed Pudding, Cinnamon Apple Overnight Oats, and Maple Brown Sugar Baked Oatmeal, I love the protein that eggs can give me in the morning.

These egg bites made with cottage cheese are the perfect solution, because I can make a batch or two at the start of the week, and then have them in the fridge ready to go in the morning!

Ingredients

Eggs - large eggs are the base of these egg bites!

Cottage Cheese - this makes the egg bites super tender and fluffy, and adds a bunch of protein.

Shredded Cheddar Cheese - I love cheese in my eggs!

Ham - I used diced deli ham, but you could use leftover roasted ham.

Diced Green Onions - I love the flavor that green onions add to eggs.

Variations

Different Meat - you could use a different type of breakfast meat like crumbled bacon, breakfast sausage, or diced chicken sausage.

Different Veggies - you could pack these with vegetables too, if you'd like. I think sautéed red bell peppers, mushrooms, spinach, zucchini, and broccoli would all be great options. You could also add fresh herbs that you have like basil, cilantro, or parsley.

Different Cheese - I kept things simple with cheddar cheese but you could use Parmesan, Gruyere, feta cheese, goat cheese, pepper jack, Monterey Jack cheese, or really any type that you have and like.

Step by Step Instructions

Photo 1. Add the cottage cheese, eggs, salt, and pepper to a large food processor or blender. Process until blended.

Photo 2. Transfer the egg mixture to a medium bowl and then stir in the ham, cheese, and green onion.

Photo 3. Divide the batter between 12 well greased muffin tins.

Photo 4. Place the muffin pan on a large baking sheet and then pour 1 cup of water onto the baking sheet. Bake at 325 degrees for 25 minutes, until cooked through. Enjoy!

Expert Tips

Storage - store leftovers in an airtight container in the fridge for 3-4 days.

Silicone Muffin Pan - these work best in a silicone muffin pan.

Reheat - I preferred reheating these in my air fryer at 400 degrees for 3-4 minutes, but you could also reheat them in the microwave.

Double The Recipe - this recipe can easily be doubled! You just need two muffin pans.

Recipe FAQs

What if I don't like cottage cheese?

You actually can't even taste the cottage cheese in these egg bites! However, you could also use plain Greek yogurt in place of the cottage cheese, if you prefer.

Why do you bake these with a water bath?

The moisture from the water bath makes these egg bites super fluffy and tender, like a water bath does for cheesecake.

Equipment

Ingredients

  • 8 large eggs
  • 1 cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 cup diced ham
  • ½ cup shredded cheddar cheese
  • 2 green onions diced

Instructions

  • Preheat the oven to 350 degrees F.
  • Grease a 12-muffin tin with non-stick cooking spray. I highly recommend using a silicone muffin pan, as it will be much easier to remove the egg bites than it will be from a non-stick muffin pan.
  • Place the muffin pan on a baking sheet and pour 1 cup of water onto the baking sheet around the pan.
  • To a large food processor or blender, add the eggs, cottage cheese, salt, and pepper.
  • Blend until creamy.
  • Transfer the egg mixture to a large or medium bowl and stir in the ham and green onions.
  • Divide the egg mixture evenly between the 12 muffin cups.
  • Bake for 25 minutes, until the egg bites and baked through and fluffy.
  • Serve and enjoy!
