Ingredients

Sirloin Steak - this is a great cut of meat that is super tender when slowly cooked.

Yellow Onion and Fresh Garlic - steak and onions go together so well, and the onions and garlic add delicious flavor and depth to the sauce.

Gravy Mix - Au Jus Gravy Mix is a a great shortcut to adding savory flavor to these steak bites and creating a rich gravy.

Beef Broth - this, with the gravy mix, helps create the base of the gravy for the steak bites to cook in. Use unsalted beef stock or low sodium broth if you are sensitive to salt.

Butter - this is added to the top of the steak bites which ensures the meat is super tender. I use unsalted butter, as there is a decent amount of salt from the au jus gravy mix, beef broth, and additional salt, so if you use salted butter, be sure to reduce the amount of added salt.

Steak Seasoning - a mixture of spices, salt, and black pepper to enhance all of the flavors.

Cornstarch - a cornstarch slurry is used to thicken the gravy.

Variations

Different Cut of Meat - you can use stew meat or chuck roast instead of sirloin.

Add Fresh Herbs - this would be delicious with some fresh rosemary, fresh thyme, or parsley.

Add Mushrooms - sautéed mushrooms would be a delicious addition to these steak bites!

Add Worcestershire - Worcestershire sauce pairs perfectly with steak, and adding 1 tablespoon to the sauce would be yummy.

Garlic - if you don't have fresh garlic, you can use 1 teaspoon of garlic powder instead.

Step by Step Instructions

Photo 1. To a slow cooker, add the cubed sirloin, steak seasoning, garlic, and onion and toss to combine.

Photo 2. Sprinkle with the au jus packet and add the beef broth. Stir to combine.

Photo 3. Lay slices of the butter evenly on top of the steak. Cover the crockpot and cook on low for 6-8 hours or high for 3-4 hours.

Photo 4. Stir in 1 tablespoon of cornstarch dissolved in 2 tablespoons of water for the last 30 minutes. Serve with a garnish of fresh parsley (optional) and enjoy!

Expert Tips

Sear the Steak - if you want a nice brown appearance on the outside of the steak pieces, you can sear them in some oil on the stovetop. Just don't cook them all of the way through.

Storage - store any leftover steak bites in an airtight container the refrigerator for 2-3 days. Reheat leftovers in the microwave or stovetop.

Serving Suggestions - I love serving these steak bites with mashed potatoes and steamed green beans. Other ideas are to serve them over egg noodles, or with Parmesan Brussels sprouts, Parmesan Roasted Potatoes, and Strawberry Arugula Salad.

Don’t overcook - Even though it’s a slow cooker recipe, steak can dry out if cooked too long. Aim for low and slow for 6-7 hours, just until tender.

Cut steak evenly - Uniform pieces (about 1-inch cubes) cook more evenly and stay tender.

Freezer Meal - this is a great option for a freezer meal! Simply add all of the ingredients except the cornstarch to a freezer bag. Once ready to cook, thaw overnight in the refrigerator and cook according to recipe instructions.

What’s the best cut of beef for slow cooker steak bites?

Chuck roast, sirloin tips, or stew meat work best. These cuts have enough marbling to stay juicy and tender after slow cooking. Avoid lean cuts like round steak, which can get tough.

Do I need to sear the steak first?

No you don't need to. I never do, but browning the steak bites before slow cooking adds rich flavor and helps lock in the juices. If you’re short on time, you can skip this step...I can confirm they’ll still be delicious.

Can I make this recipe ahead of time?

Yep! Simply prep all of the ingredients ahead of time and store it in the fridge (in the slow cooker insert if it fits). In the morning, just set it in the crock pot and go.

Can I make this on the stove instead?

Yes that would work. The steak might not be quite as tender, but you can cook the steak and onions in olive oil in a large skillet over medium-high heat until browned and then add the remaining ingredients and cook over low heat for 10-15 minutes, stirring in the cornstarch slurry for the last couple of minutes.
