I love easy ice cream desserts, especially around the holidays and in the warmer months! These Mint Brownie Ice Cream Bars are perfect for both of those. The green mint ice cream makes these a perfect St. Patrick's Day dessert, and the ice cream makes it amazing in the summer!

Brownie Mix - use your favorite brownie mix and bake it according to the package directions for the base of the ice cream bars.
Oreos - you can use regular or Mint Oreos for maximum mint flavor!
Mint Ice Cream - I either use mint chocolate chip ice cream or mint cookie ice cream, as I have never been able to find plain mint ice cream.
Cool Whip - I love using Cool Whip as an easy whipped topping.
Hot Fudge - a layer of hot fudge on top, along with more Oreos is 100% necessary.
Substitutions and Variations
Different Type of Ice Cream - if you want to make this a different flavor profile, you can really use any type of ice cream that you like! I think it would be great with Moose Tracks, Cookies and Cream, Birthday Cake, or Cherry Garcia! Or you could use peppermint/candy cane ice cream with peppermint Oreos around Christmas time. Different Type of Oreos - you could match the type of ice cream you use with the type of Oreos you use. I think Mint Oreos would be delicious with the mint ice cream.
Use an Oreo Crust - you could do an Oreo crust instead of brownies, if you prefer, like I do in my Peppermint Oreo Ice Cream Cake.
Make Your Own Chocolate Ganache - you can make your own chocolate layer by melting a package of semi-sweet chocolate chips with a couple of tablespoons of heavy cream.
How to Make Mint Brownie Ice Cream Bars

Photo 1. Prepare the brownie mix according to package directions. Spread into a parchment paper lined and greased 9x13" baking pan.

Photo 3. Bake 5 minutes less than the package directions. Press chopped Oreos onto the baked brownies while they are still warm. Let them cool for 30 minutes.
Photo 4. Spread softened ice cream on top of the cooled brownies.

Photo 5. In a bowl, mix together the Cool Whip and chopped Oreos.
Photo 6. Spread the Cool Whip mixture on top of the ice cream layer.

Photo 7. Warm up the hot fudge and then drizzle it over the Cool Whip layer.
Photo 8. Sprinkle with remaining chopped Oreos. Cover with plastic wrap and foil and freeze for at least 4 hours, ideally overnight.

Definitely! While mint chocolate chip gives these bars their classic mint brownie flavor, you could swap in chocolate, cookies and cream, or vanilla ice cream. You can even add a few drops of peppermint extract to vanilla ice cream for a homemade mint flavor.
Yes, simply use your favorite gluten-free brownie mix or homemade gluten-free brownies for the base. Double check that your ice cream and toppings are gluten free as well.
For clean slices, run a sharp knife under hot water, wipe it dry, and slice. Repeat between cuts as needed. Letting the bars soften slightly for a few minutes also helps.

Mint Brownie Ice Cream Bars
Ingredients
- 1 box brownie mix
- 4 cups Oreo cookies chopped
- 1 pint mint chip ice cream
- 8 ounce Cool Whip
- 11 ounce jar hot fudge
Instructions
Brownie Layer
- Prepare the brownies according to box directions.
- Line a 9x13" baking dish with parchment paper and then spray with cooking spray.
- Spread the brownie batter in the prepared dish and bake 5 minutes less than package instructions.
- Once baked, lightly press 2 cups of chopped Oreos into the warm brownies.
- Let cool for 30 minutes. While cooling, set out the mint chip ice cream and Cool Whip to allow them both to thaw.
- Once the ice cream is softened, I like to use a big spoon to mix it up and make it easier to spread. Spread the softened ice cream on top of the brownies.
- In a large bowl, stir together the thawed Cool Whip and 1 cup of chopped Oreos.
- Spread the Oreo Cool Whip on top of the ice cream layer.
- Warm the hot fudge by either putting it in a small pot of simmering water until warmed, or microwave in 20 second intervals until warmed, stirring between each interval.
- Drizzle the hot fudge over the Cool Whip layer, and then sprinkle with remaining chopped Oreos.
- Cover with plastic wrap and then foil, and place in the freezer for at least 4 hours.
- Once frozen, cut into bars. Enjoy!
