Ingredients
Kodiak Cake Flapjack and Waffle Mix - this is of course the main ingredient in these healthy muffins. This mix is full of whole grain wheat flour, protein, and
Unsalted Butter or Vegetable Oil - the butter is melted prior to mixing in so it does not need to be at room temperature.
Maple Syrup - maple syrup sweetens the muffins but not overly so. These healthy muffins are lightly sweetened and then studded with some chocolate chips!
Vanilla Extract
Cinnamon - a teaspoon of cinnamon adds some warm flavor to these muffins.
Milk - I used almond milk this time have used regular cow's milk too.
Semi-Sweet Chocolate Chips - I think mini chocolate chips work best in this recipe, especially for kids, but really any type of chocolate chips will work!
Variations
Add-ins. My kids and I both love the addition of mini chocolate chips but you can definitely adapt this to your preference. Blueberries, chopped berries, or chopped nuts would all be delicious options.
Swap out the sweetener. I used maple syrup but honey would also work.
How to Make Kodiak Cake Muffins
Melt the butter. In a small bowl, melt the butter in the microwave or on the stovetop.
Mix the wet ingredients. In a large mixing bowl, mix together the melted butter, maple syrup, and vanilla until well combined. Stir in the milk.
Add the dry ingredients. Add the ground cinnamon and Kodiak cake mix to the large bowl and stir with a rubber spatula until just combined.
Add the chocolate chips. Fold in the mini semisweet chocolate chips.
Bake. Divide the muffin batter between 24 cupcake liners in a muffin pan. Alternately, you can spray a muffin pan with nonstick spray and skip the cupcake liners. I like my silicone cupcake/muffin liners as they are reusable and work really well. They should be about ¾ the way full. Bake in the 350 degree oven for 20-22 minutes.
Note: I have made these as regular muffins and mini muffins. To make them into mini muffins, reduce the baking time to 12-14 minutes.
Storage. Store leftovers in an airtight container at room temperature for 1-2 days for optimal freshness. You can keep them in the fridge for up to 5 days or freeze them in a freezer bag for up to 3 months. We love freezing them and having them as an easy healthy breakfast option. They go great with my Jalapeno Bacon!
Kodiak Pancake Mix
I buy Kodiak Pancake Mix at my local Costo which is great because it is so much more affordable in bulk! Compared to regular pancake mixes, Kodiak Power Cakes mixes have os much more going for them, such as being made with whole grains and having 14 grams of protein per serving in the form of whey protein isolate. Whole grains offer extra vitamins, minerals, and fiber and the protein helps fill you up.
If you want proof that these muffins are delicious, my kids devoured 12 of these muffins the first day I made them! So not only are they filled with protein and whole grains, but they have great taste and are super tender muffins.
Recipe Tips and Variations
This protein muffin recipe is super straight forward, but here are some tips and changes you can make for them to suit your preferences.
Spreads. You can serve these yummy Kodiak Cake muffins plain but they are also delicious spread with some butter or Greek Yogurt, drizzled with honey, or slathered with peanut butter or almond butter!
Muffin liners. For this recipe you can use the paper muffin liners, silicone muffin cups, or grease the muffin tin. I definitely prefer using silicone muffin cups!

These turned out really well, but I put a couple in the fridge last night and froze the rest. This morning I put in microwave for 30 seconds and they completely changed. Flavor was different and the texture almost deflated. Any tips?
I added oats and peanut butter and these were sooo good. Like so good I couldn't believe it. Thanks for the receipe!
Ooh I love this idea of adding oats and PB! Definitely doing that next time!
What is the serving size for the nutrition information for mini muffins?
Love this recipe! Highly requested by the hubs. For the nutrition information section, how many muffins per one serving?

Was great
OH I halved the recipe so I didn’t freeze any
These were great! We loved them and I love that they make 24 so they lasted a *little* longer! I decided to just use the whole box of mix and it turned out great. I also used the butter instead of oil. Will make again and again!
They turned out so good! I had my four year old help me make them and she loved them! We halved the recipe to make mini muffins and added 1/2 a cup or plain Greek yogurt. Thank you!
Love the recipe, very easy to make and I was out of maple so I used brown sugar and still came out great. Will be doing this more often with different toppings too.
