Grilled Chili Lime Shrimp Kabobs
Grilled Chili Lime Shrimp Kabobs are the ultimate easy grilling recipe. They are prepped in less than 10 minutes and also take less than 10 minutes to cook! They are filled with flavor from fresh lime juice, chili powder, garlic, and cumin, and are delicious on top of a salad or as a light main dish.
Shrimp is my absolute favorite quick and easy protein to make for dinner. It's so versatile, as it takes on any kind of flavor that you add to it, and they cook incredibly fast. All they need is 5-7 minutes on the grill and they're ready to go! Chili Lime Shrimp is so easy to prep and is a delicious summer dinner!
For this Grilled Chili Lime Shrimp Kabob recipe, the shrimp are marinated in a combination of fresh lime juice, chili powder, cumin, garlic, and salt. The ingredients for the marinade are so simple, but oh so delicious. It only takes a few minutes to marinate the shrimp, which means dinner prep is super fast and and you won't have a bunch of grumpy hangry family members wondering when dinner will be ready!
I also added cherry tomatoes to the kabobs, for extra flavor and because I love grilled tomatoes. They are also incredibly tasty with the chili lime marinade!

This Chili Lime Shrimp recipe is made with healthy, fresh, and simple ingredients that are easy to find!
- Shrimp - I recommend using peeled and deveined fresh shrimp, which makes life so much easier! You can use tail-on or tail-off shrimp for this recipe. I like using the bigger shrimp like jumbo shrimp, which are 20-24 count per pound but again, use whatever you prefer!
- Lime Juice - freshly squeezed lime juice adds a hint of lime!
- Olive Oil - a little bit of fat keeps the shrimp well marinated.
- Chili Powder - this adds a little smokiness and tons of flavor!
- Minced Garlic Cloves - I love the flavor that fresh garlic adds.
- Cumin - ground cumin adds more smokiness to the flavor of the shrimp.
- Salt
- Cherry Tomatoes - grilled until they are slighlty soft and blistered.
How to Make Grilled Chili Lime Shrimp Kabobs
As I've said about 10 times already, this recipe is so incredibly easy to make with minimal effort! It will be dinner time before you know it.
To start, you'll combine the lime juice, olive oil, chili powder, cumin, garlic, and salt in a small bowl and mix well to combine. Add it to the raw shrimp and tomatoes, and let it marinate for about 5 minutes.
While the shrimp is marinating, preheat the grill to medium-high heat. You want it hot before you put the shrimp on so you get some grill marks, since the shrimp cook pretty fast. Thread the shrimp and tomatoes onto the skewers, and lay in a single layer on a sheet pan. Place shrimp skewers onto the grill. Cook for 2-3 minutes on each side or until the shrimp turn pink and tail curls up.
That's it! Serve topped with fresh cilantro. We love these Grilled Chili Lime Shrimp Kabobs on top of my Southwestern Salad, or alongside some Mexican Street Corn Dip! They'd also be delicious in tacos, or with more grilled fresh veggies.
Chili Lime Shrimp Tips and Variations
How to Serve. Chili lime shrimp is delicious as a main dish along with some grilled vegetables and grilled bread. Chili lime tacos in corn tortillas or flour tortillas would also be delicious, as would chili lime shrimp lettuce wraps! You could serve the shrimp on white rice, cauliflower rice, or quinoa, too.
Cook on Skillet. You can definitely make this chili lime shrimp indoors, too! Simply heat a large skillet over medium heat, add 1-2 tablespoons of olive oil, and cook shrimp for 2-3 minutes on each side.
Add some heat. Add some red pepper flakes to make these shrimp skewers spicy!
Add lime zest. Want more lime flavor? Add lime zest from ½ of a lime!

Ingredients
- 3 tablespoon lime juice *about 2 limes
- 2 tablespoon olive oil
- 1 teaspoon chili powder
- 2 cloves garlic, minced
- ½ teaspoon cumin
- ½ teaspoon salt
- 1 lb shrimp, peeled and deveined *you can use tail on or off - both work!
- 8 ounces cherry tomatoes
- wood or metal skewers/kabobs *if using wood, be sure to soak them in water for 20 minutes prior
Instructions
- In a bowl, combine the lime juice, olive oil, chili powder, garlic, cumin, and salt, and stir well to combine.
- Add the shrimp and tomatoes, and toss to coat well. Let sit for 5 minutes.
- Thread the shrimp and tomatoes onto the skewers.
- Preheat the grill to medium-high heat.
- Add the skewers and cook for 3-4 minutes on each side, until the shrimp is no longer translucent and the tomatoes are starting to blister.
- Serve and enjoy!
