Grilled Chili Lime Shrimp Kabobs

- 3 tablespoon lime juice *about 2 limes
- 2 tablespoon olive oil
- 1 teaspoon chili powder
- 2 cloves garlic, minced
- ½ teaspoon cumin
- ½ teaspoon salt
- 1 lb shrimp, peeled and deveined *you can use tail on or off - both work!
- 8 ounces cherry tomatoes
- wood or metal skewers/kabobs *if using wood, be sure to soak them in water for 20 minutes prior
In a bowl, combine the lime juice, olive oil, chili powder, garlic, cumin, and salt, and stir well to combine.
Add the shrimp and tomatoes, and toss to coat well. Let sit for 5 minutes.
Thread the shrimp and tomatoes onto the skewers.
Preheat the grill to medium-high heat.
Add the skewers and cook for 3-4 minutes on each side, until the shrimp is no longer translucent and the tomatoes are starting to blister.
