Eggnog Thumbprint Cookies are chewy eggnog flavored cookies with a Sugar cookie Hershey’s Kiss in the middle! This cookie recipe is a must make for anyone who loves eggnog and so perfect for a Christmas Cookie tray!
One of my favorite Christmas cookies are peanut butter blossoms – the ones with the chewy peanut butter cookie and the Hershey kiss (or chocolate star depending on who you talk to) pressed in the middle. I have to make at least two batches every year! Since I love eggnog, I decided to make an eggnog thumbprint cookie version.
The only problem was that I wasn’t sure what kind of Hershey kiss to put in the middle. Luckily, I didn’t have to think about it too hard because Hershey’s has a sugar cookie kiss! How perfect for these Eggnog Thumbprint Cookies?!
This recipe is really quite simple. To start, you’ll cream together the butter, granulated sugar, and brown sugar. Beat for 1 full minute. Next, add the eggs one at a time, followed by the vanilla and eggnog. Scrape down the edges of the bowl as needed. Then add the cinnamon, nutmeg, baking powder, and salt, to the butter mixture and beat to combine. Finally, add the flour and beat until well combined.
Roll the dough into dough balls into approximately 2 tablespoon sized balls and bake in a 350 degree oven on a parchment paper lined cookie sheet for 8-10 minutes. you want the edges just slightly brown – be sure not to overbake! Take them out of the oven and let them cool for 5 minutes and then press a Hershey kiss into the center of each cookie. You can press them immediately, however the Hershey kiss will melt a little bit. That’s it! Let them cool and then enjoy. Store them in an airtight container. You can also freeze them!
These cookies are so perfect for any eggnog lover! There are not many opportunities for variation in this recipe, but I do think that rum extract would be a delicious addition. It would definitely add to the eggnog aspect of the cookies – so you could go half vanilla extract and half rum extract or all rum extract!
You could also roll these in holiday colored sprinkles prior to baking to make them even more festive.
