Scalloped potatoes seem like they are something that are laborious and difficult. This actually isn't true! If you have a mandolin and 10 minutes to make a cream sauce, you are golden. Blue Cheese Scalloped Potatoes are actually quite simple and easy to make!

Cheese! These scalloped potatoes have Parmesan and blue cheese in them, and are seriously so creamy.
Easy. If you can layer some potatoes, cream sauce, and cheese, you can make these scalloped potatoes. These potatoes are delicious with Mayonnaise Roasted Turkey and Green Bean Casserole at Thanksgiving!
Make ahead. These potatoes can definitely be prepped a day in advance, so you can just pop them in the oven when you're ready to bake them. Set them out on the counter for at least 30 minutes to come to room temperature before baking.
Ingredients
Potatoes - I used red potatoes this time. I love their small size for small slices of potatoes and they are firm and hold up well with the cream sauce.
Butter - Butter and flour are used to make a roux for the cream sauce.
Garlic - fresh minced garlic for an addition of delicious garlic flavor.
Heavy cream - 2 cups are used in this decadent cream sauce.
Blue Cheese - crumbles of blue cheese are mixed into the cream sauce for that distinct blue cheese flavor.
Parmesan Cheese - more cheese?! You know it. This scalloped potato recipe is not lacking cheese!
Variations
Different potatoes. You can make scalloped potatoes with russet potatoes, Yukon gold, or red potatoes. I used red potatoes this time because that is what I have. If you're looking for a sweet potato casserole, check out my Instant Pot Sweet Potato Casserole.
Different cheese. Of course blue cheese is the star in this recipe, but if you're not a fan, you can substitute a different type of cheese. You could try goat cheese or classic Gruyere cheese.
Add bacon. I think these would be DELICIOUS with some crumbled cooked bacon layered between the potatoes and cream sauce!
Use half and half. While I would not use ALL half and half, you could swap half of the cream for half and half to lighten this dish up, just a little 🙂
Step by Step Instructions
Photo 1. Melt the butter in a large skillet. Once melted, add the garlic and cook for 1 minute.
Photo 2. Add the flour, stirring well to combine, followed by the heavy cream, whisking to combine. Cook for 4-5 minutes until the mixture is thickened.
Photo 3. Remove from heat and add the blue cheese, stirring to melt.
Photo 4. Add one layer of sliced potatoes to a greased 9x13" baking dish.
Photo 5. Pour ¼ of the cream sauce on top of the potatoes.
Photo 6. Sprinkle ⅓ cup of Parmesan cheese on top of the cream sauce.
Photo 7. Repeat the process for a total of FOUR layers. Make another layer of more potatoes on top of the cheese.
Photo 8. Then add ¼ of the cream sauce on top of the potatoes.
Photo 9. Sprinkle ⅓ cup of Parmesan cheese on top of the cream sauce.
Photo 10. Repeat this process two more times, starting with another layer of potatoes.
Photo 11. Finish third and fourth layers with remaining cream sauce and cheese.
Photo 12. Top the cream sauce with the remaining Parmesan cheese.
Photo 13. Cover with foil and bake at 375 degrees for 35 minutes. Then bake uncovered for 35-40 minutes until the cheese is golden, the potatoes are cooked through, and the casserole is bubbling.

Recipe FAQs
I use a mandolin to make sure the potatoes are sliced super thinly. You can also use a sharp knife, but a mandolin is faster.
You can use a different cheese like goat cheese, feta, or Gruyere.
This is a great dish for the holidays, and goes well with baked ham, turkey, or beef tenderloin! If you want to make this for a Sunday supper, it is delicious with roast chicken, steaks, or fish, as well.

Blue Cheese Scalloped Potatoes
Ingredients
- 2.5-3 lbs red potatoes
- 2 tablespoon butter
- 3 cloves garlic minced
- 1 tablespoon flour
- 2 cups heavy cream
- 8 ounces blue cheese crumbled (about 1 ½-2 cups)
- 1 ½ cups shredded Parmesan cheese
- fresh thyme for topping
Instructions
- Preheat the oven to 375 degrees F.
- Grease a 9x13" baking dish.
- Thinly slice your potatoes. I use a mandolin to do this so my slices are super thin.
- In a medium skillet, heat the butter over medium heat.
- Once melted, add the garlic and cook for 1 minute.
- Add the flour and whisk to combine with the butter and cook another minute.
- Slowly whisk in the cream, season with salt and pepper, and let it cook 4-5 minutes to thicken slightly.
- Remove from heat and add in the blue cheese, stirring to combine.
- Layer ¼ of the sliced potatoes on the bottom of your baking dish.
- Top the potatoes with approximately ¼ of the blue cheese cream sauce and ⅓ cup of shredded Parmesan cheese.
- Repeat this with four layers of potatoes, ending with the remaining Parmesan cheese.
- Cover with foil and bake for 35 minutes. Uncover and bake an additional 35-45 minutes, or until the potatoes are tender.
- Serve topped with fresh thyme. Enjoy!
