This Pesto Meatball Appetizer is an easy, 4 ingredient appetizer that is perfect for the holidays! It is festive with the green pesto and red tomatoes, are a hand-held appetizer, and are a great little bite-size snack.
I really love creating new appetizer recipes this time of year. Last year I didn’t really get into it, since larger gatherings were 100% off the table. This year we are still keeping it quiet, but are able to get together with close family to celebrate the holidays. that said, I’m back into the appetizer making and this Pesto Meatball Appetizer is such a fun one!
Not only is this appetizer packed with flavor from minimal ingredients, it’s so so easy to make. The flavor comes from the pesto, quality meatballs, fresh tomatoes, and mozzarella. In this recipe I used my favorite Simek’s meatballs (this blog post isn’t sponsored, however my Instagram post was FYI) and their mini meatballs worked so perfectly. Of course you could use regular sized meatballs in this recipe, however the mini ones ended up working out really well.
For the pesto, I used pesto that I made this summer and had frozen in the freezer. That said, I think there are some really good store-bought pestos, too. Just do what works for you!
As mentioned, these are so easy to make! In fact, they’re so easy that even a four year old can make them. I prepped the meatballs, and Soren assembled them!
To prep the meatballs, simply cook them according to the package directions. The Simek’s brand that I like has instructions for the oven, stovetop, or microwave. I prefer the stovetop method. Once the meatballs are cooked, toss them in the pesto.
Now, assemble! Using a cocktail skewer or toothpick, thread a mozzarella ball, tomato, and meatballs on each one. Then serve and enjoy! These pesto meatball appetizer skewers can be served immediately or at room temperature.
