Mexican Street Corn Chicken Burgers
Mexican Street Corn Chicken Burgers are super flavorful chicken burgers topped with homemade guacamole and Mexican street corn!
Now that it's officially grilling season, I am super excited to crank out some amazing grilling recipes for you guys. I'm definitely not one of those girls who is afraid of grilling...it's just another fun way to cook, just outside of the kitchen!
Mexican Street Corn Dip is one of my favorite things to make in the summer, and I had the crazy idea to put it on top of a burger. I mean, we love putting it on tacos, so why not burgers?!
Turns out, my hunch was right. These Mexican Street Corn Chicken Burgers were amaaaazing! And even better when I served them with some Frosé Margaritas - which will be coming soon on the blog! Crossing my fingers I can get the recipe out this week sometime.
These burgers start out with a simple but super flavorful and (don't hate me for saying it) moist chicken burger. I used a combination of lean ground chicken, breadcrumbs, an egg, diced red onion, and some spices and these burgers would be delicious on their own...even without the Mexican Street Corn on top!
In addition to the street corn on top of these burgers, I just couldn't help but add a dollop of my go-to guacamole on top. It really seemed to bind the burger and street corn together and I'm just gonna put it out there that it's a very necessary component of these burgers!
Lastly, I added some feta cheese on top. If you want to be super authentic, use cotija cheese. I couldn't find it at my grocery store so used feta cheese in a pinch!
If you're wanting to make these burgers easier, I have a little Trader Joe's pro tip for ya. Instead of making the street corn from scratch, you can totally use their frozen Mexican Street Corn. You guys, it's delicious!! If you're feeling super lazy, use their Chili Lime Chicken Burgers, too. While I 100% stand behind my recipe as being better, these shortcuts would definitely work in a pinch to get the same result!

Mexican Street Corn Chicken Burgers
Ingredients
For the chicken burgers:
- 1 lb ground chicken
- ¼ cup breadcrumbs
- 1 large egg whisked
- 2 green onions diced
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- ½ teaspoon salt
For the Mexican Street Corn:
- 3 cups frozen corn kernels
- 1 jalapeno diced
- 1 teaspoon chili powder
- 2 tablespoons plain Greek yogurt or sour cream
- 1 tablespoon mayonnaise
- juice from 1 lime
- ¼ cup chopped cilantro
- ½ teaspoon sea salt
For the guacamole:
- 2 ripe avocados peel and pit removed
- juice from 1 lime
- ¼ cup finely chopped green onion
- ¼ cup chopped cilantro
- ½ teaspoon ground cumin
- ½ teaspoon sea salt
- Buns
- Feta or cotija cheese for topping
Instructions
Prep the Mexican Street Corn and guacamole:
To make the Mexican Street Corn:
- Combine all of the ingredients in a medium bowl and mix well to combine. Set aside.
To make the guacamole:
- In a medium bowl, mash the avocado.
- Add the remaining ingredients and mix well to combine. Set aside.
To make the chicken burgers:
- In a large bowl, mix together the ground chicken, breadcrumbs, egg, green onion, chili powder, cumin, and salt.
- Form into ⅓ cup sized patties.
- Preheat the grill over medium-high heat.
- Add the burger patties and grill until cooked through, about 5 minutes on each side.
Assemble the burgers:
- Place one burger on each bun bottom.
- Top with guacamole, Mexican street corn, and cheese.
- Top with bun top and serve.
- Enjoy!
