Jalapeño Creamed Corn
Add some spice to your holiday spread with Jalapeño Creamed Corn! This crowd favorite side dish is beyond easy and so full of flavor.
Creamed corn is one of my favorite holiday dishes. I mean, what's not to love about a rich and buttery corn dish?! I love the combination of sweet corn and spicy jalapeños in my Mexican Street Corn Dip, so I thought a fun twist of creamed corn with jalapeños would be a winner.
This dish is truly a winner! Even my kids ate it, despite the hint of heat. Granted, the jalapeno I used wasn't super spicy. Still, I can't wait to make this for a holiday meal or a backyard BBQ!

Butter - butter adds richness to this dish and is used to sauté the onion and jalapeno.

Variations
Make it Spicier - use two jalapeños if you'd prefer your creamed corn on the spicier side. Alternately, you could increase the spice level by adding a dash of cayenne pepper for some heat.
Different Onion - you can use red onion or yellow onion instead of white.
Fresh Corn - you can use fresh corn from cobs or canned corn if you prefer.
Cheddar Cheese - add some shredded cheddar cheese to the top at the end and broil to melt. It will be like a jalapeno popper creamed corn!
Bacon - this corn recipe would be super delicious with some bacon added to it. I would add fried and chopped bacon at the step of adding the corn.
Shallot - you could two two large shallots instead of an onion.
Add More Vegetables - you could definitely bulk up this creamy jalapeno corn with more vegetables like diced red bell pepper, chopped mushrooms, or zucchini!
Step by Step Instructions
Photo 1. Chop up the onion and jalapeno, and mince the garlic.
Photo 2. In a large pan, add the butter. Melt butter over medium heat and add the onion and jalapeno. Season with salt and black pepper. Cook 5-7 minutes until softened.
Photo 3. Add the garlic and cook another minute.
Photo 4. Add the corn kernels and cook another 5 minutes to warm through.
Photo 4. Add the cream, and mix until combined.
Photo 5. Add dollops of cream cheese and stir in until it melts.
Expert Tips
Serving Suggestion - while this creamed corn recipe would be perfect for a holiday meal with my Mayonnaise Roasted Turkey or Cranberry Glazed Ham, it would also be an easy weeknight side dish with pork chops, grilled chicken, or steaks.
Leftovers - store leftovers in an airtight container in the refrigerator for up to 3 days.
Recipe FAQs
Yes! Simply cut the corn kernels off the cobs and then use them like the frozen corn. You will need approximately 4 cups of corn kernels.
I have not tried this and I don't think the creamed corn will be as creamy if you use milk.

Jalapeno Creamed Corn
Ingredients
- 2 tablespoon unsalted butter
- 1 white onion diced
- 1-2 jalapenos (depending on how spicy you'd like it) diced, stem and seeds removed
- 1 teaspoon salt
- 3 cloves garlic minced
- 28 ounces frozen corn
- ½ cup heavy whipping cream
- 4 ounces cream cheese
Instructions
- Heat the butter in a large skillet.
- Add the onion and jalapeño and cook until softened, about 5-7 minutes.
- Season with salt and pepper to taste.
- Add the garlic and cook another minute.
- Add the corn, cooking another 5 minutes to warm.
- Add the cream, mixing well to combine.
- Add dollops of cream cheese and stir to incorporate until well mixed.
- Serve and enjoy!
