Fajita Chicken Quinoa Bake is a healthy quinoa casserole filled with fajita chicken, fajita spices, and peppers! Oh and don't forget the cheese. It is a casserole, after all!
Ah, quinoa. My long lost friend. I'm not sure why but it's been awhile since I've cooked with quinoa. I think it was the mess my kids make with it that deterred me from cooking with it for awhile. Luckily, now 2 out of 3 of my kids mainly keep their food on their plates so I was ready to start cooking it again. Starting with this Fajita Chicken Quinoa Bake! Oh I'm so glad I decided to get back on the quinoa train - this quinoa casserole is so good!
If you're not familiar with quinoa, it can be used like rice is used in most cases. It has a really great nutritional profile, as it's filled with lots of vitamins and has more protein and fiber than other grains. One cup actually has 8 grams of protein and is one of the few plant proteins that is a complete protein. Pretty cool!
In addition to being delicious, healthy, and filling, this quinoa casserole is also super easy to make. It's as easy as dumping all of the ingredients into a baking dish, covering it with foil, and baking it in the oven until it's perfectly cooked!
To start, add the quinoa, peppers, onion, and diced chicken to a greased baking dish, followed by fajita seasoning, taco sauce, diced tomatoes, and chicken broth. Gently stir it all together to get everything nice and combined. Then sprinkle with cheese and cover with foil. Bake in a 375 degree F oven for 50-55 minutes, and take the foil off for the last 10 minutes to get the cheese golden brown. After the baking time, the quinoa and chicken will be cooked and the entire casserole will be cheesy!
To serve, I like topping this with some diced avocado, green onion, cilantro, and sour cream (or plain Greek yogurt!).
