Fajita Chicken Quinoa Bake

Ingredients

  • 1 cup quinoa
  • 1 lb boneless skinless chicken breasts cut into thin 1" pieces
  • 1 red bell pepper stem and seeds removed, diced
  • 1 yellow bell pepper stem and seeds removed, diced
  • ½ white onion diced
  • 14 ounce can diced tomatoes
  • 2 tablespoon fajita seasoning
  • 8 ounces taco sauce
  • 1 cup chicken broth
  • 1 ½ cups shredded cheddar cheese

Toppings:

  • Diced green onion
  • chopped cilantro
  • Sour cream
  • Diced avocado

Instructions

  • Preheat the oven to 375 degrees F.
  • Grease a 9x13" baking dish.
  • To the baking dish, add the quinoa, chicken, bell peppers, onion, diced tomatoes, fajita seasoning, taco sauce, and broth. Mix well with a spatula.
  • Top with the shredded cheese.
  • Cover with foil and bake in preheated oven for 50-55 minutes, removing the foil for the last 10 minutes.
  • Serve topped with cilantro, green onion, sour cream, and avocado.
  • Enjoy!
