- 1 cup quinoa
- 1 lb boneless skinless chicken breasts cut into thin 1" pieces
- 1 red bell pepper stem and seeds removed, diced
- 1 yellow bell pepper stem and seeds removed, diced
- ½ white onion diced
- 14 ounce can diced tomatoes
- 2 tablespoon fajita seasoning
- 8 ounces taco sauce
- 1 cup chicken broth
- 1 ½ cups shredded cheddar cheese
Toppings:
- Diced green onion
- chopped cilantro
- Sour cream
- Diced avocado
Preheat the oven to 375 degrees F.
Grease a 9x13" baking dish.
To the baking dish, add the quinoa, chicken, bell peppers, onion, diced tomatoes, fajita seasoning, taco sauce, and broth. Mix well with a spatula.
Top with the shredded cheese.
Cover with foil and bake in preheated oven for 50-55 minutes, removing the foil for the last 10 minutes.
Serve topped with cilantro, green onion, sour cream, and avocado.
