Boneless Skinless Chicken Breasts - make sure to pound them very thin.
Cottage Cheese - instead of cream cheese, I used cottage cheese to increase the protein in this dish. It makes the Tuscan chicken super creamy, while lightening it up a bit.
Milk - this thins out the cottage cheese.
Shredded Mozzarella Cheese - this makes the dish super cheesy and adds great flavor.
Sun Dried Tomatoes - I always use jarred sun-dried tomatoes in oil, not the ones in packages.
Italian Seasoning - a combination of basil, oregano, rosemary, thyme, and marjoram.
Garlic Powder - gotta have garlic flavor in Tuscan chicken!
Shallot - this adds delicious flavor to the dish.
Spinach - adds some color and nutrition to the dish.

Variations
Chicken Thighs - you can definitely use chicken thighs instead of chicken breasts in this dish. You don't need to pound them as much, as they are typically pretty thin already.
Chicken Tenders - you could also use chicken tenders. You might need to decrease the cooking time by 5 minutes, but I would use a meat thermometer to ensure the chicken is cooked to the temperature of 165 degrees F.
Fresh Herbs - you could definitely add some fresh basil, fresh thyme, or fresh oregano to the cottage cheese cream sauce, if you'd like!
Prep Ahead - low on time? Prep the cottage cheese mixture ahead of time so all you need to do at mealtime is assemble and pop in the oven.
Add Diced Tomatoes - instead of sun-dried tomatoes, you can add a can of strained diced tomatoes, if you'd prefer. I think using fire roasted diced tomatoes would add some great flavor.
Step by Step Instructions
Photo 1. Add the cottage cheese, cream, spices, salt, and pepper to a food processor. Pulse until blended.
Photo 2. Transfer the cottage cheese mixture to a bowl. Stir in the sun-dried tomatoes, diced shallot, and shredded cheese.
Photo 3. Place the chicken in a large plastic Ziplock bag. Pound with a rolling pin or meat pounder until thin.
Photo 4. Place the chicken in a greased 9x13" baking dish. Top with the Tuscan cottage cheese mixture. Bake at 425 degrees F for 20 minutes.
Photo 5. Add the chopped spinach, cover with foil, and bake another 5-10 minutes, until the chicken is cooked to 165 degrees F.
Photo 6. Stir the spinach into the sauce.
Expert Tips
Use a 9x13" Baking Dish - it's important not to crowd the chicken, otherwise it will take longer to cook.
Pound the Chicken Thin - again, the chicken will take longer to cook if it is too thick, so be sure to pound it thin.
Serving Suggestions - I love serving this with Parmesan Roasted Potatoes and broccoli. Other ideas would be Air Fryer Roasted Sweet Potatoes, Brown Butter Mashed Potatoes, and Honey Balsamic Roasted Brussels Sprouts. You could also serve this over pasta for a Creamy Tuscan Chicken Pasta dish.
