One of my go-to meals to make for my family and for other families after they’ve had a baby or are in need of a meal, is burrito bowls. I love grilling some taco seasoned chicken tenders, making my Mexican Street Corn Dip and Green Cilantro Sauce, and serving it with some homemade guac and salsa. Oh and you can’t forget the Baked Cilantro Lime Rice!
Shockingly, the hardest part for me has always been the rice. I just haven’t been able to make rice without it being sticky. Luckily, I’ve found the absolute best way to make amazing rice – in the oven!
This cilantro lime baked rice has super simple ingredients, as you can see. As mentioned, it’s important to use long grain rice like basmati rice, or just rice that is labeled “long grain rice.”
I promise you, once you make this cilantro lime rice in the oven, you won’t go back to making it any other way! I can’t wait to make other types of rice in the oven like this.
As mentioned, this recipe is really easy to make. To start, preheat the oven to 350 degrees F. Grease a 9×13″ baking dish, add the rice, broth, garlic powder, cumin, lime juice, and salt. Give it a stir and then cover tightly with aluminum foil.
Bake in the preheated oven for 50-60 minutes, until the rice easily fluffs. Lastly, stir in some fresh chopped cilantro. That’s it – perfectly cooked cilantro lime rice!
