Fast forward 8 months later and I'm in my kitchen, thinking of a Ziploc baggie of lavender that my mom gave me, and feeling the urge to make some lavender lemon cookies. Can I just say I think I nailed it?! This lemon lavender sugar cookie recipe is chewy, full of lemon flavor and the perfect hint of lavender!
These Lavender Lemon Sugar Cookies are kind of game changer. Like, you think you aren't going to like lavender in your cookies but you TOTALLY ARE! They are chewy in the middle (my idea of the perfect cookie), with a perfect combination of lemon and lavender.
So if you're looking for a cookie that is a little different but not too weird/different, DEFINITELY give these a try. I've already made these lavender cookies twice in less than 4 days!

Ingredients
Unsalted Butter - I use room temperature unsalted butter to start off this cookie recipe.

Variations
Different Citrus - you could use orange, lime, or grapefruit instead of lemon.
Lemon Glaze - instead of rolling these in sugar before baking, you can bake them without the sugar and then drizzle them with a simple powdered sugar lemon glaze. Simply mix together 2 cups of powdered sugar with 1 tablespoon lemon juice, 1 teaspoon of lemon zest, and then 1-3 tablespoons of milk to create a glaze consistency.
Step by Step Instructions
Photo 1. In a large mixing bowl, combine the sugar, lemon zest, and lavender buds.
Photo 2. Rub the sugar, lemon zest, and lavender between your fingers to incorporate them together well and infuse the sugar with their flavors. You can also use a mortar and pestle for this step.
Photo 3. Add the butter to the sugar and cream with an electric mixer until combined. I typically use my Kitchen Aid stand mixer.
Photo 4. Add the fresh lemon juice, egg, and vanilla to the butter mixture and beat until combined.
Photo 5. Add the baking soda and beat to combine.
Photo 6. Add the flour, beating until combined.
Photo 7. Form the dough into approximately 1.5 tablespoon sized balls and roll in sugar. Place on a parchment lined baking sheet.
Photo 8. Bake at 350 degrees for 10-12 minutes, until the edges are set. Let cool for 5 minutes on the baking sheet and then transfer to a cooling rack to cool completely.

Storage - store cookies in an airtight container at room temperature for 3-4 days, in the fridge for 5-7 days, or in the freezer for up to 3 months.

Lavender Lemon Sugar Cookies
Ingredients
- 1 cup granulated sugar
- zest of 1 large lemon
- 1 tablespoon dried lavender
- ½ cup unsalted butter at room temperature
- 2 tablespoons lemon juice
- 1 large egg
- 1 teaspoon pure vanilla extract
- 1 teaspoon baking soda
- ½ teaspoon salt
- 2 cups all-purpose flour
- ¼ cup granulated sugar for rolling
Instructions
- Preheat oven to 350 degrees F.
- Line baking sheet with parchment paper.
- In a small bowl, combine sugar, lemon zest, and lavender and rub all together between your fingers for about 1 minute.
- Combine sugar/lemon zest/lavender with butter in a large bowl with electric mixer.
- Beat on high for 1 minute.
- Add lemon juice, egg, and vanilla extract and beat until well combined.
- Add baking soda and salt, and beat until combined.
- Add flour and beat until combined.
- Roll dough into approximately 1 tablespoon balls.
- Roll balls in sugar and place on baking sheet, about 2" apart.
- Bake in preheated oven for 10-12 minutes, until edges are just set. They will seem a little underdone that is okay - they will set up and be chewy in the middle!
- Let cool for 5 minutes on baking sheet then transfer to a cooling rack to cool completely.
- Repeat with remaining dough.
- Eat and enjoy!

How many cookies does it make?
Still giving five stars as the recipe is fine as-is. I will, however, cut back on the lavender a bit next time. I also had to flatten them half way through the bake cycle. Not a big deal.

I have never made these without eggs, so I cannot say for sure. I do know some replacements for eggs in baking can be applesauce, oil, or flaxseed eggs, but I'm not sure how they would work in this recipe. Sorry!

I just made these with Bobs Red Mill egg replacer and earth balance vegan butter. They came out perfect and they look like I bought them at a fancy bakery.
These are some of the best cookies I have ever had & they're always a huge success!! Is there a way to make them sturdy enough to decorate & not be too soft?

Tried these with the fresh lavender from my garden so I doubled it. Also went light on the lemon zest and added about 1/2 tsp of lemon thyme. These are awesome. 6 cookies disappeared before I got them put away. There are only 2 of us here!

I have been a baker most of my life, over 50 years. Taylor is right...she nailed it with this recipe.
I grow my own lavender so love making lavender cookies. Added extra lemon zest and used a small ice cream scoop. This recipe made 48 cookies that are one or two bites!. My oven runs a little hotter, so baked at 350 for 9 minutes and they were perfect. Thanks for the great recipe. I would send a picture but don't know how! haha
