Slow Cooker Pork Tenderloin and Potatoes is an easy, set it and forget it slow cooker recipe that is a meal in one! This is a family favorite recipe that will become a weeknight staple.
We aren't huge "meat and potatoes" eaters, so I wasn't sure how this dinner would be received by my family. To my surprise (and delight!) everyone LOVED it. My boys loved the meat especially, everyone went crazy over the potatoes, and Emma loved stealing beans off everyone's plate!
The great thing about this recipe is that it is truly a set it and forget it slow cooker meal. There's no other prep aside from mixing it all up. It's a weeknight hero meal!

Pork Tenderloin - I love pork tenderloin because it's an affordable cut of meat that is super adaptable to whatever flavors you add to it.
Red Potatoes and Green Beans - these vegetables work perfectly in this slow cooker recipe. The potatoes become super tender and not mushy (it's important to use red potatoes!) and the green beans are flavorful and delicious.
French Onion Dip Mix - while this mix is typically used to make a dip, it's also delicious in this slow cooker recipe!
Butter - since pork tenderloin is pretty lean, a little butter helps keep everything tender and moist.
Chicken Broth - again, just a little to form the "sauce" in this dish.
Salt and Pepper - you can add additional salt and pepper to taste.

Variations
Different Meat - this would also work really well with boneless skinless chicken breasts or chicken thighs. You could also use pork chops or pork roast, if you'd like.
Different/Additional Vegetables - you could definitely bump up the veggies in this dish. I think carrots, white or yellow onions, mushrooms, and sweet potatoes would all be great options.
Olive Oil - instead of butter, you could use olive oil for the fat.
Broth - I have made this using chicken broth and beef broth. Vegetable broth would work fine, too.
More Herbs - if you want to add more flavor, you can add ½ to 1 teaspoon of dried thyme, oregano, or garlic powder.
Step by Step Instructions
This recipe is so easy, it essentially has two steps!
Photo 1. Add the pork , potatoes, and green beans to slow cooker. Sprinkle with French onion soup mix and drizzle with melted butter and chicken broth.
Photo 2. Cover and cook on low for 6-7 hours or high for 3-4 hours. To serve, slice the pork tenderloin and serve with a serving of potatoes and green beans. Season with additional salt and pepper, as desired.
Expert Tips
Storage - you can store leftovers in an airtight container for 3-4 days.
Reheat - you can reheat in the oven at 350 for about 10 minutes on an oven-safe dish or in the microwave.
Serving Suggestions - While this crock pot pork tenderloin recipe is great on its own, you can serve it with some crusty French bread, a green salad, or rice for additional bulk.
Make a Gravy - while I liked the thinner juices spooned on top of the pork, you could make a gravy out of it. Simply make a cornstarch slurry with 1 tablespoon of cornstarch and 1 tablespoon of water and then add to the sauce. Let it cook on high for 10-15 minutes to thicken.

- 1 lb green beans trimmed
- 1 lb red potatoes quartered
- ¼ cup butter melted
- ½ cup chicken broth
