Sheet Pan Cajun Sausage and Vegetables is a super easy sheet pan dinner made with spicy andouille sausage and cajun spiced vegetables! This healthy dinner recipe is full of flavor and is also great for meal prep.
I think I can speak for most people when I say one pan or pot dinners are such a lifesaver. Who doesn’t love a dinner that can be made in one dish and are super easy to clean up?! My Sheet Pan Dijon Herb Chicken Sausage and Vegetables is one of my family’s favorites and this new Sheet Pan Cajun Sausage and Vegetables is about to be another one.
Not only is this cajun sausage and veggies super easy to whip up, it is so full of flavor! It has a bit of a kick from the cajun seasoning, which we actually love. My kids (Lars in particular) are starting to enjoy spicier things which opens up a lot more options for dinner!
What You’ll Need
Sweet Potato – you can use regular potatoes too, if that’s what you prefer or have on hand.
Broccoli – I used pre-chopped broccoli for this, but a small head of broccoli would also work.
Cauliflower – I used pre-chopped cauliflower, but a small head of cauliflower would also work
Cajun Seasoning – I use this kind from Target or this kind from my local grocery store.
Garlic Powder – cajun seasoning typically has garlic powder in it, but I love a little extra garlic flavor!
Salt
Olive Oil
Andouille Sausage – I used cooked chicken Andouille sausage, which I find at my local grocery store or Target.
How to Make Sheet Pan Cajun Sausage and Vegetables
This one pan dinner is so easy to make. To start, preheat the oven to 425 degrees F. Next, combine the chopped veggies in a large bowl. Confession: I used pre-chopped broccoli and cauliflower. It saves so much time! I did peel and chop the sweet potato on my own. Once the veggies are in the bowl, sprinkle them with the cajun seasoning, garlic powder, and salt, and drizzle with olive oil. Toss the veggies well so they are well seasoned.
Place the veggies on a baking sheet and bake in the preheated oven for 20 minutes. After 20 minutes, add chunks of andouille sausage onto the pan with the veggies and bake another 10 minutes. The sausage should be warmed through at this point and ready to eat.
This sheet pan andouille sausage and veggies is delicious on its own or along with some rice, quinoa, or toasty bread!
