Ingredients

chopped broccoli

ounces
chopped cauliflower

large or two small sweet potatoes
peeled and diced

olive oil

tablespoon
cajun seasoning
1
teaspoon
garlic powder

teaspoon
salt

ounces
chicken andouille sausage
cut into large chunks
Instructions
Preheat the oven to 400 degrees F.
Combine broccoli, cauliflower, and diced sweet potato in a large bowl.
Drizzle with olive oil and then sprinkle with cajun seasoning, garlic powder, and salt and toss well to combine.
Spread out on a large baking sheet.
Bake in the preheated oven for 20 minutes.
Add chunks of andouille sausage to the sheet pan.
Return the pan to the oven and bake for 10 more minutes.
Serve with rice, quinoa, or on its own. Enjoy!
Notes
I used pre-chopped broccoli and cauliflower. It was equal to about 3-4 cups of each.
