Monster Cookie Oat Balls are a healthy oat ball recipe inspired by my favorite cookies - Monster Cookies! These protein filled oat balls are filled with oats, almond flour, peanut butter, honey, chocolate chips, butterscotch chips, and M&Ms.
The boys are at a YMCA day camp this week, and I wanted to have a fun treat-like snack for them to come home to after their long days. They are huge fan of the peanut butter oat bars that I make, so I decided to put a monster cookie spin on some oat balls and I came up with these Monster Cookie Oat Balls. They are full of healthy ingredients like oats and peanut butter, along with some fun add-ins including M&Ms, butterscotch chips, and chocolate chips. It's a win all around!
These oat balls are super easy to whip up. To start, combine the dry ingredients - the quick oats and almond flour. Give them a little stir to combine them. You can add the remaining ingredients two ways - you can mix together the peanut butter, honey, vanilla, and salt in a separate bowl and then add it to the dry ingredients. OR you can save yourself a bowl to clean up and just add them all to the dry ingredients and mix them up in there. I took the easy route this time and added them to the bowl with the oats without any pre-mixing. It still all mixes up just fine, but if you want to pre-mix it - go for it!
Once all of the wet ingredients and combined with the oat mixture, fold in the add-ins. I used M&Ms, semi-sweet chocolate chips, and butterscotch chips to mimic my favorite monster cookies. You could also add raisins or peanuts, if you want.
Once it's all mixed together, form the mixture into ~2 tablespoon sized balls and refrigerate. Store them in an airtight container in the refrigerator. Enjoy!
The boys (and Emma!) absolutely love these Monster Cookie Oat Balls. They're a perfect mid-day snack or even a little sweet treat after lunch or dinner. I love eating them after a workout for a little snack. Bonus: they're so easy to make, even the kids can help!
Quick Oats vs Old Fashioned Oats - you can really use either, but my kids prefer the version with quick oats as they are less chewy. I like them both ways!
Use Mini Chocolate Chips - I used regular size chocolate chips this time when I made them, but I love using mini chocolate chips because they distribute around more evenly and result in less big chunks throughout the oat balls.
Peanut Butter Chips - if you're not a fan of butterscotch, you can swap them for peanut butter chips or just add more chocolate chips.
Storage - store these oat balls in an airtight container in the fridge for up to 7 days.
