Having two toddlers in the house with growing appetites is an ever changing challenging when it comes to feeding them. One day they love a food and the next they don’t touch it. Lars is the pickier of the two, but Soren definitely goes through phases, too.
If there’s one thing that they are certain to eat, it’s FRUIT! They’d eat an all-fruit diet if I let them.
To keep up with their fruit consumption, I like to cut up a bunch of fruit at the beginning of the week to have on hand to pull out when they’re looking for a snack. This week, I decided to get fancy with things and I made Mojito Fruit Salad.
Basically, I made a yummy dressing of lime juice, honey, and fresh mint, and tossed a ton of fruit in it. On second thought, I think a splash of rum might be pretty tasty in it as well – if I wasn’t serving it to my kids!
This fruit salad could not be easier, and would be perfect for a spring brunch – Mother’s Day, perhaps?!
I used a pretty wide variety of fruit in this Mojito Fruit Salad – using strawberries, cantaloupe, pineapple, blueberries, blackberries, and kiwis. You can use a ton of other fruit, too, depending on your preference or what you have on hand. I think mango, watermelon, honeydew, raspberries, and grapes would all be great in this fruit salad!

This makes a HUGE bowl of fruit salad – If it’s going to be a side dish at, say, a Mother’s Day brunch, I’d say it would serve at least 12 people.
