Mango Coconut Smoothie is a delicious and fresh breakfast on the go or a snack.  It's made with whole milk Greek yogurt for a boost of healthy fat and protein!

I thought it might be fun today if we took a look at my extensive history of yogurt eating.  What else do you have to do on a Friday?

Sometime in middle school I was introduced to the wonders of Go-Gurt.  You know...those little tubes of sugar-filled yogurt that has as much sugar as ice cream but parents give their kids thinking it must be good for them because hey! It's yogurt!

Then sometime in high school I became obsessed with the whipped yogurt.  The kind that also has a ton of sugar in it, but now it makes you feel fancy because it's 'whipped' and has the consistency of mousse.

Then college came around, I got my own apartment, and I started wanting to make fancy yogurt parfaits.  I started buying the big containers of vanilla yogurt, but always, always, always low-fat or non-fat.  These were also the days I used spray butter and non-fat cheese because fat was the devil.  Oh, how things have changed.

Fast forward to my graduate school days when I got trendy and only ate Greek yogurt.  Since the flavored ones were low-fat Greek yogurt, that's what I ate because my yogurt still needed to be sweetened.

Then speed up to a couple of years ago when I ditched the sugar and started eating plain Greek yogurt.  I grew to love the tang of the plain flavor, combined with homemade granola and sliced fruit. I think this is also when I officially got my "Foodie" badge.  They make those, didn't you know?

But now, my friends, my yogurt game is changing once again.  Because not only is Stonyfield making delicious Greek yogurt, but it's making WHOLE MILK Greek yogurt!  Rich, luscious, creamy whole milk Greek yogurt.

My high school and college self is probably freaking out because why in the world would I actually WANT to eat yogurt what is made with whole milk?!

Because it's delicious, that's why.  And in my years and years of yogurt eating, I've learned a few things.

One: you shouldn't eat yogurt out of a tube.  Ever.

Two: Low fat/fat free yogurt just isn't worth it.  I'd much rather have the full-fat version because it's way more satisfying and not full of the things the stuff they fill it with when they take out the fat.

PLUS, now that Lars is eating yogurt, he has to have organic whole milk yogurt, so we might as well share the tub y'know?

Now that he days are getting a *little* warmer as spring nears, I'm getting back in my smoothie groove.  During the winter, I just can't do smoothies.  In the spring and summer?  I make one almost every day.

This Mango Coconut Smoothie is a tropical treat to cute anyone from the winter blues!  With simple ingredients like frozen mango, frozen banana, coconut milk, WHOLE MILK Greek yogurt, and honey, it's super quick and easy to whip up and with the Greek yogurt it does a great job at keeping me satisfied for a couple of hours.

If you like your smoothies green (I usually always do) you could definitely add a handful of spinach or kale, or also healthy add-ins like a scoop of vanilla protein powder, flaxseed, hempseed, or any other of your favorite smoothie add-ins!

Ingredients

  • 1 ¼ cup coconut milk I used the unsweetened refrigerated kind
  • 1 cup frozen mango
  • ½ frozen banana
  • ½ cup Stonyfield Plain Whole Milk Greek Yogurt
  • ½ tablespoon Agave sweetener you could also use honey (or more if you prefer your smoothies a little sweeter)
  • chia seeds for topping

Instructions

  • Add all ingredients except the chia seeds to your blender, in the order they are listed.
  • Blend on high speed until all ingredients are pureed and smooth.
  • Pour into 1 large glass or 2 smaller glasses.
  • Top with chia seeds.
  • Enjoy!

    1. I used myfitnesspal.com to calculate the calories and, using the refrigerated coconut milk (as opposed to the canned kind), the smoothie is 360 calories including a tablespoon of chia seeds on top. It is approximately 300 calories without the chia seeds. Hope this helps Kathy!
