Christmas Sugar Cookie Bars are an easy way to get that delicious sugar cookie flavor but in the form of a bar. The sugar cookie dough is filled with flavors of vanilla and almond, and the buttercream frosting is absolutely finger licking good!

I know I *just* posted a Christmas cookie recipe but when it comes to holiday sweets, I'm on a roll and there's no stopping me now! Although, after making these Christmas Sugar Cookie Bars, I'm honestly not sure I need any other recipe this Christmas. These sugar cookie bars are SO freaking good that I had to eat two and then give the rest away.

These bars are full of flavor from the almond and vanilla extracts. Is anyone else a sucker for almond extract flavored goodies? I just can't resist them. Not only are these cookie bars insanely delish, but the holiday sprinkles make them festive and cheery. I think these would be so perfect for a holiday potluck or party!

These Christmas cookie bars are super easy to make. To start, beat the butter and sugar together until they're well combined, about a minute or so. Then add the eggs, a teaspoon almond extract, and teaspoon vanilla extract, beating until well combined. Next, add the baking powder, cornstarch, salt, and flour, and beat until combined. Last, fold in the sprinkles. Spread the mixture into a greased baking sheet (could also line it with parchment paper if you want!) and bake in a 350 degree oven for 16-18 minutes. Cool completely.

Then make the buttercream frosting. If you prefer, you could use your favorite cream cheese frosting, too, but I like buttercream. Beat the butter and almond extract together and then slowly add in the powdered sugar, followed by the cream. Spread onto the cooled bars with a knife or an offset spatula and then decorate with more sprinkles. You could also add some food coloring to the frosting to make these even more festive. Cut into squares and enjoy!

Store leftovers covered with plastic wrap or in Tupperware.

Ingredients

Sugar Cookie Bars

  • 1 cup unsalted butter at room temperature
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon pure almond extract
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 tsp baking powder
  • ½ teaspoon salt
  • 2 ¼ cups all-purpose flour
  • ½ cup Christmas sprinkles

Buttercream Frosting

  • 1 cup unsalted butter, at room temperature
  • 1 teaspoon almond extract
  • 2 ½ cups powdered sugar
  • 4 tablespoon heavy cream plus 1-2 tablespoon more for desired consistency
  • additional Christmas sprinkles for topping

Instructions

  • Preheat the oven to 350 degrees F. Grease a 9x13" baking dish.
  • In a large bowl with an electric mixer, beat the butter and sugar until well combined, about 1 minute.
  • Add the eggs, almond extract, and vanilla extract, and beat until well combined.
  • Add the baking powder, cornstarch, salt, and flour and beat until just combined. Fold in the sprinkles.
  • Spread the batter into the prepared baking dish.
  • Bake in the preheated oven for 16-18 minutes. The top will be slightly golden and the bars may seem underbaked but it's important not to over-bake these!
  • Cool completely.

Buttercream

  • Beat the butter and almond extract until well combined.
  • Add the powdered sugar ½ cup at a time, beating until each addition is combined.
  • Add the heavy cream, beating until desired consistency is reached.
  • Spread over cooled bars and sprinkle with more Christmas sprinkles.
  • Enjoy!
