Sweet Potato Apple Casserole

Ingredients

Sweet Potato Apple Filling

  • 2 large sweet potatoes peeled and sliced into half or quarter moons
  • 2 large apples peeled and sliced
  • ¼ cup melted butter
  • cup brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt

Pecan Topping

  • 5 tablespoon melted butter
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • ½ cup chopped pecans
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt

Instructions

  • Preheat the oven to 350 degrees F. Spray a 9x13" baking dish with cooking spray or grease it with butter.
  • In a large bowl, mix together the sliced apples and sweet potatoes.
  • Add the melted butter, brown sugar, cinnamon, and salt, and mix well to combine.
  • Transfer the mixture to the prepared baking dish.
  • In a medium or small bowl, mix together the topping ingredients until well combined. Sprinkle it over the casserole.
  • Cover with foil and bake in the preheated oven for 30 minutes.
  • Remove the foil and bake another 30 minutes, until the sweet potatoes and apples are tender and the pecan topping is golden brown.
  • Serve and enjoy!

Notes

Prep Ahead - this casserole is super easy to prep ahead to time to minimize prep time at meal time. Simply assemble the casserole according to instructions and then cover with foil or plastic wrap and place in the refrigerator until ready to bake. I would recommend letting it sit out at room temperature for 20-30 minutes prior to baking OR add 10 minutes to baking time (with foil on) to account for it being in the refrigerator.
Storage - store leftovers in an airtight container in the fridge for 3-4 days.
Reheat - you can reheat leftovers in the microwave. The pecan topping might not be quite as crunchy, but you could pop it under the broiler to crisp it back up.
