Equipment

  • Slow Cooker

Ingredients

French Onion Chicken

  • 1 ½ lbs boneless skinless chicken thighs
  • 1 yellow onion sliced
  • 4 tablespoon butter
  • 1 cup chicken broth
  • 1 packet French onion soup mix

Sliders

  • 6 slices provolone cheese
  • 12 slider buns
  • 2 tablespoon butter
  • 1 teaspoon chopped chives or dried chives
  • ¼ teaspoon garlic powder
  • ¼ teaspoon salt

Instructions

  • Add the chicken, onion, butter, chicken broth, and French onion soup mix to the slow cooker.
  • Cook on high for 3 to 4 hours or low for 6 to 7 hours, until the chicken shreds easily.
  • Shred the chicken.
  • Preheat the oven to 350 degrees F.
  • Assemble the sliders with the shredded chicken and provolone cheese on the slider buns. Be sure to strain the chicken from the liquid so the sliders are not soggy. Note: you might not use all of the chicken.
  • Melt the butter with the garlic powder, chives, and salt, and brush over the tops.
  • Cover with foil and bake for 15 to 20 minutes, removing the foil for the last 5 minutes.
  • Serve and enjoy! I like to serve these with a small bowl of the liquid from the slow cooker to dip the sliders in, like a French dip sandwich.

Notes

Don't Skip the Foil - keeping the sliders covered lets the cheese melt without the buns getting too dark, and the last 5 minutes uncovered gives you toasty tops.
Make Ahead - You can cook and shred the chicken up to a day ahead, refrigerate it, then assemble and bake when you're ready.
Storage - store leftovers in an airtight container in the refrigerator for 3 to 4 days. Reheat in the oven so the buns don't get chewy.
Freezer Meal - this can easily be made into a freezer meal. Simply add the chicken, onion soup mix, onion, and broth to a freezer bag. Freeze until ready to use. Thaw in the refrigerator overnight and then follow instructions.
