- 2 tablespoon unsalted butter
- 1 white onion diced
- 1-2 jalapenos (depending on how spicy you'd like it) diced, stem and seeds removed
- 1 teaspoon salt
- 3 cloves garlic minced
- 28 ounces frozen corn
- ½ cup heavy whipping cream
- 4 ounces cream cheese
Heat the butter in a large skillet.
Add the onion and jalapeño and cook until softened, about 5-7 minutes.
Season with salt and pepper to taste.
Add the garlic and cook another minute.
Add the corn, cooking another 5 minutes to warm.
Add the cream, mixing well to combine.
Add dollops of cream cheese and stir to incorporate until well mixed.
Serve and enjoy!
Serving Suggestion - while this creamed corn recipe would be perfect for a holiday meal with my Mayonnaise Roasted Turkey or Cranberry Glazed Ham, it would also be an easy weeknight side dish with pork chops, grilled chicken, or steaks.
