Homemade McGriddle Sandwiches

Sheet Pan Eggs
- 18 large eggs
- ⅓ cup milk
- ½ teaspoon salt
- ½ teaspoon black pepper
Pancakes
- 2 cups pancake mix (I use Krusteaz pancake mix - you can use whatever kind you like and use the amount that will make 14-16 pancakes)
- 1 ¾ cup water again, follow specific pancake mix directions. This amount is if using Krusteaz
- 1 tablespoon maple syrup
Sausage
- 6 chicken sausage patties
Sheet Pan Eggs
Preheat the oven to 350 degrees F.
Add the eggs, milk, salt, and pepper to a blender and blend until smooth.
Grease a large baking sheet with cooking spray. Line baking sheet with parchment paper and then grease the parchment paper.
Pour the egg mixture on top of the prepared baking sheet.
Bake in the preheated oven for 15-17 minutes.
Pancakes and Sausage
While the eggs are baking, prepare the pancakes and sausage.
Make the pancakes according to the pancake mix box and then cook according to box directions.
Heat a large skillet and cook the sausage until cooked through.
Assemble
Cut the sheet pan eggs in squares using a knife or pizza wheel or use a biscuit butter or pancake mold to cut unto circles.
Top half of the pancakes with an egg patty, sausage patty, slice of cheese, and another pancake.
Either let the heat from the sausage and pancakes melt the cheese, or place in the oven for 4-5 minutes to melt the cheese.

- Store leftovers in an airtight container in the fridge for 2-3 days.
- You can also freeze these. Wrap tightly in plastic wrap first and then foil. Freeze for up to 2 months. To reheat, microwave on 50% heat for 2-3 minutes.
