Sugar Cookie Bars
- 1 cup unsalted butter at room temperature
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure almond extract
- 1 teaspoon vanilla extract
- 1 tablespoon cornstarch
- 1 tsp baking powder
- ½ teaspoon salt
- 2 ¼ cups all-purpose flour
- ½ cup Christmas sprinkles
Buttercream Frosting
- 1 cup unsalted butter, at room temperature
- 1 teaspoon almond extract
- 2 ½ cups powdered sugar
- 4 tablespoon heavy cream plus 1-2 tablespoon more for desired consistency
- additional Christmas sprinkles for topping
Preheat the oven to 350 degrees F. Grease a 9x13" baking dish.
In a large bowl with an electric mixer, beat the butter and sugar until well combined, about 1 minute.
Add the eggs, almond extract, and vanilla extract, and beat until well combined.
Add the baking powder, cornstarch, salt, and flour and beat until just combined. Fold in the sprinkles.
Spread the batter into the prepared baking dish.
Bake in the preheated oven for 16-18 minutes. The top will be slightly golden and the bars may seem underbaked but it's important not to over-bake these!
Cool completely.
Buttercream
Beat the butter and almond extract until well combined.
Add the powdered sugar ½ cup at a time, beating until each addition is combined.
Add the heavy cream, beating until desired consistency is reached.
Spread over cooled bars and sprinkle with more Christmas sprinkles.
