Roasted Tomatoes with Burrata

Ingredients

  • 1 pint Bushel Boy Grape or Cherry Tomatoes
  • 2 tablespoon olive oil
  • 3 cloves garlic minced
  • ½ teaspoon sea salt
  • ¼ teaspoon pepper
  • 1 round of burrata cheese about 3-4 ounces
  • fresh chopped basil for topping
  • crostini for serving

Instructions

  • Preheat the oven to 400 degrees F.
  • Place tomatoes on a baking sheet and toss with olive oil, garlic, salt, and pepper.
  • Roast in the oven for 15-20 minutes, until they start to burst open.
  • Serve the tomatoes on top or alongside burrata cheese, garnished with fresh basil. 
  • Serve with crostini.
